Description

This melting chocolate fondant cake is a real delight for chocolate lovers. I often prepare it for family celebrations or birthdays, and it is always very appreciated. The recipe is simple and quick to make with the Thermomix®, which is a considerable advantage. The secret lies in the quality of the chocolate and in the cooking, which must be just long enough for the cake to remain melting inside. A little unsweetened cocoa powder sprinkled on top adds a touch of bitterness that perfectly balances the sweet taste of the cake. A real treat!

Ingredients (5 ingredients)

  • 3 piece egg whites
  • 6 piece egg yolks
  • 180 g icing sugar or caster sugar
  • 180 g butter
  • 200 g baker's chocolate

Preparation (10 steps)

Melt the chocolate and butter

Thermomix® Setting
5 min/122°F/Speed 2 50

Put 200 g of baker's chocolate and 180 g of butter cut into pieces in the Thermomix bowl. Melt for 5 Min./50°C/Stufe 2.

Mix the egg yolks and sugar

Thermomix® Setting
2 min/Speed 4

Add 6 egg yolks and 180 g of icing sugar or caster sugar to the Thermomix bowl. Mix for 2 Min./Stufe 4 until the mixture whitens.

Incorporate the chocolate-butter mixture

Thermomix® Setting
30 sec/Speed 3

Pour the melted chocolate-butter mixture into the Thermomix bowl with the egg yolks-sugar mixture. Mix gently for 30 Sek./Stufe 3.

Whisk the egg whites until stiff

Thermomix® Setting
3 min/Speed 3.5

Insert the whisk into the Thermomix bowl. Add 3 egg whites and whisk until stiff peaks form for 3 Min./Stufe 3.5.

Gently fold in the egg whites

Thermomix® Setting
30 sec/Linkslauf Speed 2 Reverse

Remove the whisk. Gently fold the egg whites into the chocolate mixture with the reverse function for 30 Sek./Counterclockwise Stufe 2.

Prepare the mold and pour in the batter

Butter and flour a rectangular and shallow mold (example: baking sheet). Pour two-thirds of the mixture into the mold.

Bake the cake

Bake in a gentle oven (160°C) for about 35 minutes.

Unmold and let cool

Unmold the cake and let it cool completely.

Cover and sprinkle

Cover the cake with the last third of the mixture. Sprinkle with unsweetened cocoa powder.

Cut and enjoy

Cut the cake into small squares before enjoying chilled.
