Description

Prepare a hearty broth fondue with meat, vegetables and Swabian ravioli with the Thermomix®. The base is leeks, carrots, onions and celery root, refined with fresh parsley. This hearty main course is ideal for festive occasions or cozy winter evenings. The preparation time is a total of 240 minutes, of which approximately 60 minutes is active work time. The recipe is designed for 6 servings.

  • 3 Carrots
  • 3 Onions
  • 0.25 Celery root
  • 1 Bd. Parsley
  • 3 EL Olive oil
  • 3 Bay leaves
  • 1 TL Allspice (whole)
  • 1 TL Pepper (whole)
  • Salt
  • 250 ml White wine
  • 2 l Water
  • 300 g Beef fillet
  • 300 g Pork fillet
  • 300 g Chicken breast fillet
  • 1 Broccoli
  • 250 g Mushrooms
  • 2 red bell pepper
  • 300 g small Swabian Ravioli

Preparation (7 steps)

Prepare vegetables

Wash the leeks and carrots and cut into coarse pieces. Peel 2 onions and celery and cut into coarse pieces. Wash the parsley and chop roughly. Halve the remaining onion with the skin on.

Chop vegetables

Put leeks, carrots, peeled onions and celery into the mixing bowl and chop for 5 sec./speed 5. If necessary, push down with the spatula.

Sauté vegetables

Add 3 tbsp olive oil and sauté for 5 min./120°C/speed 1.

Prepare broth

30 min/212°F/Speed 1 100

Add parsley, 3 bay leaves, 1 tsp allspice (whole), 1 tsp pepper (whole), salt, 250 ml white wine and 2 l water and cook for 30 min./100°C/speed 1.

Reduce broth

30 min/212°F/Speed 1 100

Pour the broth through a fine sieve or cloth. Return the broth to the mixing bowl and reduce for 30 min./100°C/speed 1 without the measuring cup until it has reduced by about ⅓.

Prepare meat and vegetables

Cut the beef, pork and chicken breast fillets into bite-sized pieces. Wash the broccoli and separate the florets. Clean the mushrooms and halve, quarter or leave whole depending on their size. Wash the peppers, remove the core and dice.

Serve fondue

Pour the broth into a fondue pot and keep warm on the table. Arrange the meat, mushrooms, vegetables and Swabian ravioli in small bowls and serve with the fondue. Skewer with fondue forks and cook in the broth for the desired cooking time.
