Description

This Thermomix® recipe for pork tenderloin with herb crust and braised vegetables is a hearty main course with Mediterranean flavors. The main ingredients are pork tenderloin, pine nuts, rosemary, potatoes and carrots. In 80 minutes, including 40 minutes of active work, a festive dish for 6 people is created. Ideal for a winter family dinner or special occasions.

Ingredients (14 ingredients)

  • 100 g Pine nuts
  • 4 Zweig(e) Rosemary
  • 150 ml Honey
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • 2 Stück Pork tenderloins
  • 500 g small Potatoes
  • 300 g Carrots
  • 2 Stange(n) Leek
  • 200 g Zucchini
  • 4 EL Rapeseed oil
  • 3 EL Soy sauce
  • 75 ml Aceto Balsamico
  • nach Geschmack Sugar

Preparation (9 steps)

Chop pine nuts

Thermomix® Setting

Add 100 g pine nuts to the mixing bowl and chop for 3 sec/speed 5. Transfer and set aside.

Chop rosemary

Thermomix® Setting

Wash 4 sprigs of rosemary, shake dry, pluck the needles and place in the mixing bowl. Chop for 3 sec/speed 8. Transfer and set aside.

Prepare nut mixture

Mix half of the chopped rosemary with the chopped pine nuts and 50 ml honey in a bowl. Season with salt and pepper.

Prepare pork tenderloin

Wash 2 pork tenderloins (approx. 450g each), pat dry and use a knife to cut lengthwise a little deeper than to the middle. Open the meat and spread the nut mixture on it. Close and tie tightly with kitchen string. Season with salt and pepper.

Prepare vegetables

Peel and quarter 500 g small potatoes. Peel and dice 300 g carrots. Clean 2 leeks and cut into fine rings, wash and dice 200 g zucchini. Mix everything in a bowl with 2 tbsp rapeseed oil and the remaining chopped rosemary and season with salt and pepper.

Sear meat

Heat 2 tbsp rapeseed oil in a pan, add the meat and brown on all sides. Place in a roasting pan and spread the potatoes and vegetables around it.

Prepare honey-soy sauce

Mix 100 ml honey and 3 tbsp soy sauce in a bowl. Brush the meat with part of the sauce.

Braising in the oven

Place the roasting pan in the oven preheated to 175 °C top and bottom heat and cook for about 40-45 minutes. Brush with the remaining honey sauce again and again, stir vegetables and potatoes.

Finalisation

Remove meat and vegetables from the roasting pan and season with 75 ml Aceto Balsamico and sugar.
