Description

This alfalfa and manchego cheese salad is an explosion of freshness and flavor. Perfect for a light meal or as an accompaniment to a main course. Ingredients (10 ingredients)

  • 2 tazas alfalfa sprouts
  • 1 piece small lettuce cut into pieces
  • 0.5 kilogramo fresh white mushrooms and sliced
  • 2 piece red tomatoes sliced
  • 1 can corn kernels (or sweet corn)
  • 1 gusto olives
  • 250 gramos manchego chihuahua cheese in squares
  • 1 puñado deflemada sliced onion
  • 1 gusto olive oil
  • 1 pinch salt

Preparation (5 steps)

Preparation of lettuce and alfalfa

Wash and cut the lettuce into small pieces. Place the lettuce and alfalfa sprouts in a large bowl. Reserve.

Preparation of mushrooms and tomatoes

Wash and slice the fresh mushrooms. Wash and slice the tomatoes. Place the mushrooms and tomatoes in a separate bowl.

Incorporation of ingredients

Add the corn kernels (sweet corn), olives to taste and the deflemada sliced onion to the bowl with the mushrooms and tomatoes. Mix gently.

Final mix and dressing

Pour the mixture of mushrooms, tomatoes, corn, olives and onion over the lettuce and alfalfa sprouts in a salad bowl or suitable container. Add the manchego chihuahua cheese in squares. In the Thermomix glass, add olive oil and a pinch of salt. Mix 5 sec./Stufe 3.

Salad dressing

Pour the dressing over the salad and mix gently to combine all the ingredients. Serve immediately.
