Description

This fried fish with herbs and peanuts is a tasty and fragrant dish, inspired by Asian cuisine. I often prepare it for family meals or with friends, because it is always very appreciated. The turmeric, ginger and chilli marinade gives the fish a unique and slightly spicy flavour. The chopped peanuts add a crunchy and delicious touch. This dish is ideal for a light and original lunch or dinner. It is quite quick to prepare, but requires a marinating time of 3 hours for the fish to soak up the flavours well. A real delight!

Ingredients (13 ingredients)

  • 1 bunch dill
  • 6 cl oil
  • 4 piece spring onions with the green part
  • 3 piece minced shallots
  • 60 g chopped peanuts
  • 500 g fish fillets, cut into bite-sized pieces (salmon, pike, trout, in any case, a river fish)
  • 1 c à s sugar
  • 2 piece fresh red chilies, seeded
  • 3 c à s ginger
  • 2 c à s fish sauce
  • 1 c à s white vinegar
  • 5 cl water
  • 3 c à s turmeric powder

Preparation of the spice paste

Thermomix® Setting
15 sec/Speed 8, 10 sec/Speed 3

In the Thermomix bowl, put 3 tbsp of turmeric powder, 3 tbsp of ginger and 2 fresh red chilies, seeded. Mix 15 Sec./Stufe 8 until a paste is obtained. Then add 2 tbsp of fish sauce, 5 cl of water, 1 tbsp of white vinegar and 1 tbsp of sugar. Mix 10 Sec./Stufe 3.

Marinating the fish

Place 500g of fish fillets cut into bite-sized pieces in a bowl. Pour the prepared marinade over it, stir gently to coat the fish well and let it rest in the refrigerator for about 3 hours.

Transfer of the fish

Transfer the marinated fish to a serving dish and reserve the marinade.

Baking the fish in the oven

Preheat the oven grill. Cook the fish for 3 minutes under the grill.

Cooking the fish in a pan

In a pan, heat 6 cl of oil over medium heat. Add the cooked fish and stir gently. Cook for 3 minutes.

Adding herbs and onions

Reduce the heat. Put 1 large bunch of dill and 4 spring onions with the green part in the pan. Sauté everything for 1 minute.

Adding shallots and marinade

Then add 3 minced shallots and the reserved marinade to the pan. Sauté everything for 3 minutes.

Finishing

Sprinkle 60g of chopped peanuts on the fish.
