Description

This Thermomix® recipe for meatballs with asparagus in cheese sauce is a hearty main course with ground beef and fresh, green and white asparagus. Preparation with the Thermomix® takes a total of 35 minutes and yields 4 servings. Ideal for a quick and inexpensive meal for the whole family.

Ingredients (13 ingredients)

  • 500 g Ground beef
  • 1 TL Mustard
  • 1 TL Tomato paste
  • 1 Egg
  • Salt
  • Pepper
  • 200 g Green asparagus
  • 200 g White asparagus
  • 300 g Sauce Hollandaise
  • 50 g Grated Cheddar
  • 2 EL Chopped parsley
  • Oil
  • 50 ml Water

Preparation (6 steps)

Prepare meatballs

Place 500 g ground beef, 1 tsp mustard, 1 tsp tomato paste, 1 egg, salt and pepper in a bowl and mix well. Form 12 meatballs from the mixture.

Prepare asparagus

Peel 200 g of white asparagus. Cut 200 g of green and 200 g of white asparagus into small pieces, removing the woody ends.

Fry meatballs

Heat oil in a pan and fry the meatballs vigorously on both sides for about 10 minutes, then remove.

Fry asparagus

Heat a little more oil in the pan and fry the green and white asparagus for 10 minutes, then remove.

Prepare the sauce

Put 300 g Sauce Hollandaise, 50 ml water, 50 g grated Cheddar and 2 tbsp chopped parsley in the mixing bowl and mix for 3 min./60°C/level 2.

Add meatballs and asparagus

Thermomix® Setting
5 min/194°F/Linkslauf Speed 1 90 Reverse

Add the meatballs and asparagus to the sauce in the mixing bowl and simmer for 5 min./90°C/Reverse level 1.
