Description

This autumn frittata with mushrooms and radicchio is a simple and tasty dish, perfect for a Sunday brunch or a quick dinner. The button mushrooms and chanterelle mushrooms, sautéed in a pan with garlic and parsley, blend perfectly with the bitter taste of the radicchio. The addition of grated cheese makes the frittata even richer and tastier. I often prepare it when I have guests for dinner, because it is a dish that everyone always likes. It is prepared in a short time and is an excellent alternative to the usual frittata. Try it, you won't regret it!

Ingredients (9 ingredients)

  • 80 g button mushrooms
  • 80 g chanterelle mushrooms
  • 1 piece radicchio
  • 1 clove garlic
  • 5 piece eggs
  • 2 tbsp grated cheese
  • 2 tbsp extra virgin olive oil
  • 1 q.b. fine salt
  • 1 q.b. tritato parsley

Preparation (11 steps)

Preparation of the button mushrooms

Remove the stems from the button mushrooms, peel them and cut them into small pieces. Set aside.

Preparation of the chanterelle mushrooms

Cut the chanterelle mushrooms into small pieces and set aside.

Preparation of the radicchio

Cut the radicchio into thin strips with a cutting board and a knife. Set aside.

Chop the garlic

Put the garlic clove in the bowl and chop for 3 Sec./Speed 7.

Sauté the garlic

Thermomix® Setting

Add the extra virgin olive oil to the bowl and sauté for 3 Min./120°C/Speed 1.

Cook the mushrooms

Thermomix® Setting
10 min/248°F/Speed 1/Linkslauf 120 Reverse

Add the button mushrooms and chanterelle mushrooms to the bowl, salt, add the chopped parsley and cook for 10 Min./120°C/Speed 1/Reverse.

Cook the radicchio

Thermomix® Setting
5 min/248°F/Speed 1/Linkslauf 120 Reverse

Remove the mushrooms from the bowl and set aside. Add the radicchio to the bowl with a drizzle of oil and a pinch of salt. Cook for 5 Min./120°C/Speed 1/Reverse. The radicchio should wilt.

Prepare the egg mixture

In a bowl, beat the eggs, add salt and add the grated cheese. Mix well to combine.

Combine the ingredients

Pour the mushrooms and radicchio into the egg mixture as well. Mix well by stirring.

Cook the frittata

Butter a pan and pour the mixture into it. Cook over low heat with the lid on for 10 minutes. Turn the frittata and continue cooking for another 10 minutes.

Serve

Let it cool, move to a serving dish and cut the frittata into slices. Serve.
