Description

This sweet potato and spinach frittata is a delightful and healthy dish, perfect for a weekend brunch or a light lunch. The sweetness of the potatoes complements the earthy spinach and salty feta beautifully. I've been making this for years, and it's always a hit! It's also a great way to use up leftover cooked sweet potatoes. This recipe is vegetarian and packed with protein, making it a satisfying and nutritious meal. Feel free to add a pinch of chili flakes for a little kick!

Ingredients (6 ingredients)

  • 3 piece sweet potatoes
  • 2 tbsp olive oil
  • 100 g baby spinach
  • 6 piece large eggs
  • 100 g feta
  • 1.6 g salt

Preparation (7 steps)

Prepare the Sweet Potatoes

Pierce the sweet potatoes a few times with a fork. Place them in the microwave and cook on high for 5-8 minutes, or until soft. Let them cool slightly.

Wilt the Spinach

Heat the olive oil in the Thermomix mixing bowl. Add the baby spinach and cook for 2 minutes/120°C/Stufe 1 until wilted. You may need to do this in batches depending on the size of your spinach.

Prepare Sweet Potato

Cut each sweet potato in half lengthwise and use a spoon to scoop out the flesh, keeping it in big chunks. Add the sweet potato to the Thermomix mixing bowl with the spinach.

Combine Ingredients

10 sec/Speed 2/Linkslauf Reverse

Stir the sweet potato and spinach together in the Thermomix mixing bowl for 10 seconds/Stufe 2/Linkslauf, being careful not to break up the sweet potato too much.

Add Eggs and Feta

Whisk the eggs in a separate bowl. Pour the eggs into the Thermomix mixing bowl and swirl around so it fills any gaps. Scatter the feta over the top.

Cook the Frittata

Pour the mixture into a 20cm ovenproof frying pan. Cook on the stovetop over a low heat for 4-5 minutes until the bottom and sides are set.

Finish in the Oven

Place the frying pan under the grill for 1-2 minutes to cook the top – poke a knife into the centre to ensure it’s cooked through. Cool before slicing into wedges.
