Description

This sweet potato omelette is a simple and delicious recipe that I often prepare at home. The sweet potato gives it a sweet and creamy touch that makes it irresistible. It is perfect for a weekend brunch or as a light main dish. Also, it is an excellent way to incorporate more vegetables into your diet. The preparation is very quick with the Thermomix®, although it requires a little time to fry the sweet potato. If you prefer a healthier option, you can cook the sweet potato in the oven or in the microwave. I hope you enjoy this recipe as much as I do!

Ingredients (4 ingredients)

  • 4 piece eggs
  • 2 piece sweet potatoes
  • 1 pinch salt
  • 1 pinch pepper

Preparation (6 steps)

Peel and prepare the sweet potato

Peel the sweet potatoes and add the desired amount depending on the thickness you want for the omelette. Cut the sweet potatoes in half and, if they are very thick, cut them in half again. Then, cut into thin slices as for a potato omelette. Set aside.

Fry the sweet potato

Place the sweet potato slices in a pan with a good splash of oil. Fry as if they were potatoes, stirring occasionally so that they brown on all sides. When they are ready, remove and drain well from the oil. Set aside.

Beat the eggs

Place the eggs, salt and pepper in a bowl. Beat well with the Thermomix: 10 seconds/Speed 4.

Mix the sweet potato and eggs

Add the fried sweet potato to the bowl with the beaten eggs. Mix gently with the Thermomix: 5 seconds/Speed 2/Reverse rotation. Let stand for 2-3 minutes.

Set the omelette

Heat a little oil in a frying pan. When hot, add the omelette mixture. Let it set over low heat. When you notice that it is set around the edges, turn the omelette over and let it finish cooking to taste.

Serve

Remove the omelette from the pan and let it rest for a few minutes before serving. Ready to eat!
