Description

This pumpkin and onion omelette is a simple and delicious recipe, perfect for a quick meal or a weekend brunch. The sweetness of the pumpkin combines perfectly with the caramelized flavor of the onion, creating a juicy and flavorful omelette. I often prepare it in autumn, when the pumpkin is at its best. It is a very nutritious and economical vegetarian option. You can add a little sweet or spicy paprika to give it an extra touch. Go ahead and try it, you will love it!

Ingredients (6 ingredients)

  • 300 gramos cooked pumpkin
  • 4 piece eggs
  • 1 piece onion
  • 1 pinch salt
  • 1 pinch pepper
  • 1 chorro olive oil

Preparation (7 steps)

Prepare the pumpkin

Peel the pumpkin and cut it into small pieces. Place the pieces in a microwave-safe container, cover with plastic wrap and cook in the microwave for 4-5 minutes at maximum power. Reserve.

Chop the onion

Peel the onion and cut it into small pieces. Introduce the onion into the Thermomix glass and chop for 3 seconds at speed 5.

Sauté the onion

Add a splash of olive oil to the Thermomix glass with the chopped onion. Sauté for 5 minutes at 120°C at speed 1.

Add the pumpkin and sauté

Add the cooked pumpkin to the Thermomix glass along with the onion. Add a pinch of salt and pepper. Sauté for 2 minutes at 120°C at speed 1 with left turn.

Beat the eggs

In a bowl, beat the eggs with a pinch of salt and pepper.

Mix the ingredients

Pour the pumpkin and onion mixture over the beaten eggs. Stir well to integrate all the ingredients.

Set the omelette

In a non-stick frying pan, heat a little olive oil over medium heat. Pour the omelette mixture into the pan and let it set for a few minutes on one side. Carefully turn over and cook on the other side until golden brown and set to taste.
