Description

These courgette fritters with parmesan are a little marvel for an aperitif or as a starter. I often make them in summer, when the courgettes from the garden are in abundance. The recipe is really simple and quick, perfect for an improvised brunch or a picnic. The grated parmesan brings a small tasty touch that marries wonderfully with the sweetness of the courgettes. You can enjoy them hot or cold, it's always a treat! For a lighter version, you can replace part of the flour with wholemeal flour. A true delight to share!

Ingredients (10 ingredients)

  • 200 g flour
  • 20 g grated parmesan
  • 15 cl milk
  • 1 c. à c. baking powder
  • 10 cl sunflower oil
  • 3 piece eggs
  • 2 piece courgettes (small)
  • 1 c. à s. olive oil
  • 1 pinch fine salt
  • 1 pinch pepper

Preparation (4 steps)

Grate the courgettes

Thermomix® Setting
5 sec/Speed 5

Wash and cut the ends of the courgettes. Cut the courgettes into pieces and put them in the Thermomix bowl. Roughly grate the courgettes without peeling them for 5 Sek./Stufe 5.

Preparation of the dough

Thermomix® Setting
20 sec/Speed 4

Add the flour, grated parmesan, milk, baking powder, olive oil, eggs, salt and pepper to the Thermomix bowl. Mix everything for 20 Sek./Stufe 4.

Incorporate the courgettes

Thermomix® Setting
10 sec/Linkslauf Speed 2 Reverse

Add the grated courgettes to the mixture in the Thermomix bowl. Mix gently with the reverse function for 10 Sek./Linkslauf Stufe 2 so as not to crush them too much.

Cooking the fritters

Heat the sunflower oil in a large non-stick frying pan over medium heat. Place tablespoons of dough in the hot oil. Let the fritters brown for a few minutes on each side. Drain them on absorbent paper.
