Description

These Greek pancakes are a delight for breakfast or brunch. The combination of Greek yogurt and a touch of sugar creates a fluffy texture and a slightly acidic flavor that is simply irresistible. I often prepare them on weekends to surprise my family. They are very easy to make and the result is spectacular. The dough is prepared in the blink of an eye with the Thermomix®, and after a brief rest in the refrigerator, they are ready to cook. Serve these pancakes with honey, fresh fruit or your favorite syrup. I assure you that they will become a must in your kitchen!

Ingredients (8 ingredients)

  • 200 gramos Greek yogurt
  • 100 gramos Milk
  • 50 gramos Sugar
  • 150 gramos Flour
  • 10 gramos Baking powder
  • 1 pinch Salt
  • 2 piece Eggs
  • 50 gramos Butter

Mix liquid ingredients

In the Thermomix bowl, add the eggs, Greek yogurt and milk. Mix for 15 seconds at speed 4.

Prepare dry ingredients

In a separate bowl, mix the flour, baking powder, salt and sugar. Stir well to combine.

Incorporate dry ingredients into the liquid mixture

Pour the mixture of liquid ingredients from the Thermomix into the bowl with the dry ingredients. Gently mix with a spatula until integrated, avoiding over-mixing.

Melt the butter

Place the butter in the Thermomix bowl and melt for 2 minutes at 50°C and speed 2.

Incorporate the melted butter

Pour the melted butter into the dough and mix gently with a spatula. Cover the bowl with plastic wrap and refrigerate for 1 hour.

Cook the pancakes

Heat a frying pan or griddle over medium-low heat. Spread with a little butter. Pour a ladle of batter into the hot pan to form each pancake. Cook until bubbles appear on the surface, then flip and cook until golden brown.

Serve the hot pancakes with honey, fresh fruit or your favorite topping.
