Description

This vegetarian spring stew from the Thermomix® is a light main course with fresh asparagus, potatoes, carrots and sugar snap peas. Preparing it as a warming soup takes about 40 minutes and yields 4 servings. Ideal for quick, healthy cooking with seasonal vegetables. Particularly suitable as a family meal or for lovers of light vegetable cuisine.

Ingredients (12 ingredients)

  • 1 l Vegetable broth
  • 200 g white asparagus
  • 200 g waxy potatoes
  • 200 g Carrots
  • 100 g Sugar snap peas
  • 200 g Broccoli
  • 200 g Cauliflower
  • 100 g fresh peas
  • 1 Stück Egg yolk
  • 100 g Cream
  • 1 Prise Pepper
  • 1 Prise Salt

Preparation (6 steps)

Cook potatoes

Peel the potatoes, cut into pieces and cook in salted water in the simmering basket for approx. 15 min./Varoma/speed 1.

Prepare vegetables

While the potatoes are cooking, peel the carrots and cut into sticks. Clean the sugar snap peas. Rinse the broccoli and cauliflower florets. Halve the peas.

Cook asparagus

10 min/Varoma/Speed 1 Varoma

Put 1 l of vegetable broth into the mixing bowl and heat. 5 min./100°C/speed 1. Peel the asparagus, break off the woody ends. Cut the spears into 4 cm pieces and place in the simmering basket. Cook for 10 min./Varoma/speed 1. Remove the asparagus and set aside.

Cook vegetables

8-10 min/Varoma/Speed 1 Varoma

Place the carrots, sugar snap peas, broccoli, cauliflower and peas in the simmering basket. Cook for 8-10 min./Varoma/speed 1 until the vegetables are al dente. Remove the vegetables with a slotted spoon and set aside.

Prepare sauce

Put egg yolk and cream in the mixing bowl. Whisk for 10 sec./speed 4. Add a little of the hot broth and stir in. Add the mixture to the remaining broth in the mixing bowl. Heat for 2 min./90°C/speed 2. Season with salt and pepper.

Add vegetables

Add the potatoes, asparagus and the remaining vegetables to the mixing bowl and heat briefly. Do not cook!
