Description

This fruity pomegranate melon soup is a refreshing treat that tastes especially good on warm days. The combination of sweet pomegranate juice, sparkling lemon and exotic fruits such as papaya and honeydew melon makes it a special taste experience. I love serving this soup as a light appetizer or a refreshing dessert. It is easy to prepare and can be prepared well in advance, so you have more time for your guests. A touch of clove gives the soup a fine, wintry note that harmonizes perfectly with the sweetness of the fruit. Try it and let yourself be surprised!

Ingredients (10 ingredients)

  • 1 piece Organic Lemon
  • 500 ml Pomegranate juice
  • 250 ml Apple juice
  • 4 tbsp Pomegranate syrup
  • 1 tbsp Honey
  • 2 piece Cloves
  • 2 tsp Cornstarch
  • 1 piece Pomegranate
  • 0.5 piece Papaya (approx. 190 g)
  • 0.25 piece Honeydew melon (approx. 300 g)

Preparation (6 steps)

Grate lemon zest and squeeze juice

Rinse the lemon under hot water and rub dry. Grate the zest with a zester and set aside. Halve the lemon and squeeze the juice. Set the juice aside.

Prepare fruit juice mixture

Put 500 ml pomegranate juice, 250 ml apple juice (except for 50 ml), 4 tbsp pomegranate syrup, 1 tbsp honey, 2 cloves, lemon juice and lemon zest into the mixing bowl and heat for 8 min./100°C/speed 1.

Thicken starch

Thermomix® Setting

Mix 50 ml apple juice and 2 tsp cornstarch in a small bowl. Add the mixed starch to the mixing bowl and stir in for 2 min./100°C/speed 2.

Cool and Refrigerate

Pour the soup from the mixing bowl into a bowl and let it cool for about 1 hour. Then refrigerate covered for about 1 hour.

Prepare fruits

In the meantime, halve the pomegranate and knock out the seeds with the help of the back of a spoon. Peel the papaya and honeydew melon, remove the seeds and cut the pulp into cubes.

Strain and serve soup

After the cooling time, pour the soup through a sieve to remove the cloves and lemon zest. Arrange the soup with the prepared fruits in deep plates and serve.
