Description

These coconut-pineapple muffins from the Thermomix® are a delicious cake snack with shredded coconut and candied pineapple. The recipe is vegetarian and is ideal as finger food for parties or for breakfast. With a preparation time of 60 minutes, 12 servings are created. Perfect for anyone looking for a fruity and simple baking idea.

Ingredients (11 ingredients)

  • 250 g Flour
  • 50 g Shredded coconut
  • 2 TL Baking powder
  • 0.5 TL Baking soda
  • 200 g Candied pineapple
  • 1 Stück Egg
  • 100 g Sugar
  • 125 g Margarine
  • 150 ml Buttermilk
  • 75 g Icing sugar
  • 2 EL Water

Preparation (9 steps)

Preheat oven and prepare muffin tin

Preheat the oven to 180 °C (convection: 160 °C). Line a muffin tin with paper liners or grease and flour. Perform this step without Thermomix.

Mix dry ingredients

15 sec/Speed 4

Put 250 g flour, 50 g shredded coconut, 2 tsp baking powder and 1/2 tsp baking soda in the mixing bowl and mix for 15 sec/speed 4. Then transfer.

Chop candied pineapple

Thermomix® Setting
5 sec/Speed 5

Put 200 g candied pineapple in the mixing bowl and chop for 5 sec/speed 5. Then add to the dry ingredients and mix.

Whisk liquid ingredients

Thermomix® Setting
2 min/Speed 3

Put 1 egg, 100 g sugar and 125 g room temperature margarine in the mixing bowl and whisk with the butterfly for 2 min/speed 3.

Prepare dough

Thermomix® Setting
20 sec/Speed 3

Add 150 ml buttermilk alternately with the flour mixture and stir in for 20 sec/speed 3. Use a spatula to loosen everything from the edge.

Bake muffins

Fill the dough into the prepared muffin cups and bake in the preheated oven for about 30 minutes. Perform this step without Thermomix.

Let muffins cool

Let the baked muffins cool for 10 minutes and remove from the mold. Perform this step without Thermomix.

Prepare glaze

Thermomix® Setting
15 sec/Speed 3

Put 75 g icing sugar and 2 tbsp water in the mixing bowl and stir for 15 sec/speed 3 until a smooth glaze forms.

Glaze muffins

Spread the glaze on the cooled muffins and sprinkle with shredded coconut as desired. Perform this step without Thermomix.
