Description

Shortcrust pastry cookies with chocolate chips are a simple Thermomix® recipe for Christmas cookies. The main ingredients are margarine, sugar, egg and flour, refined with gingerbread spice. Preparation takes about 57 minutes and yields approximately 30 servings. Ideal as finger food or dessert for the whole family in winter.

Ingredients (11 ingredients)

  • 150 g Margarine (at room temperature)
  • 125 g Sugar
  • 1 Päckchen Vanilla sugar
  • 1 Stück Egg (size L)
  • Food coloring (orange or red and yellow)
  • 300 g Flour
  • 1 Prise Iodized salt
  • 1 TL Gingerbread spice (slightly heaped)
  • 1 Packung Chocolate chips (baking stable, in the baking shelf)
  • 1 Tuben White sugar icing
  • Baking paper

Preparation (8 steps)

Mix margarine, sugar and vanilla sugar

Put 150 g margarine at room temperature, 125 g sugar and 1 packet of vanilla sugar into the mixing bowl and mix for 20 sec/speed 4.

Add egg and food coloring

Add 1 egg (size L) and food coloring (orange, red and yellow mixed) to the mixing bowl and stir in for 15 sec/speed 3.

Mix flour, salt and spices

Thermomix® Setting

Add 300 g flour, 1 pinch of iodized salt and 1 tsp gingerbread spice (slightly heaped, optional) to the mixing bowl and mix for 20 sec/speed 4.

Knead dough

Thermomix® Setting
2 min/Kneading speed

Knead the dough in the mixing bowl for 2 min/kneading setting.

Roll out and cut out dough

Remove the dough from the mixing bowl, form a ball with floured hands and roll out thinly in portions on a floured work surface to 4-5 mm. Cut out circles with a glass or cookie cutter (Ø approx. 7-9 cm).

Shape and cover cookies

On the cut-out dough circles, use the same glass or cookie cutter to press the cheeks as a marking in a semicircle at the bottom right and left. Place three chocolate chips as eyes and snout and press down lightly.

Bake cookies

Bake fox cookies on baking sheets lined with baking paper in a preheated oven at 180 °C (convection oven: 160 °C) for approx. 12 minutes. Pull off the baking sheet with the baking paper and let cool on a wire rack.

Decorate cookies

After cooling, fill the cheeks with white sugar icing and paint on the ears.
