Description

These game ground meat chestnut wraps are a real eye-catcher and taste simply fantastic! The recipe is super quick to prepare and perfect for a cozy evening with friends or as an extraordinary appetizer. The spicy game ground meat harmonizes wonderfully with the sweet chestnuts and the fresh hoisin sauce. The crunchy iceberg lettuce leaves provide the necessary crunch. I especially like to make these wraps in the fall when chestnuts are in season. An absolute favorite recipe that is well received at every party!

Ingredients (15 ingredients)

  • Vegetable oil, for frying
  • 500 Gramm Game ground meat
  • 200 Gramm Cooked chestnuts, chopped
  • 1 Onion
  • 2 Garlic cloves
  • 80 Milliliter Hoisin sauce
  • 2 Esslöffel Soy sauce
  • 1 Esslöffel Rice vinegar
  • 1 Esslöffel Sriracha Sauce
  • 2 Teelöffel Ginger zest
  • 2 Spring onions, finely chopped
  • Fresh coriander
  • Chili flakes
  • Sesame
  • 1 großer Kopf Iceberg lettuce

Preparation (6 steps)

Chop onion and garlic

Peel the onion, halve it and put it in the mixing bowl with the garlic cloves. Chop for 3 sec./speed 5. Use the spatula to scrape everything down from the edge.

Sauté onion and garlic

Add the chopped onion and garlic to a pan with vegetable oil and sauté until translucent. Fry the meat well in the pan, stirring constantly so that it becomes fine and does not "clump".

Prepare sauce

Put hoisin sauce, soy sauce, rice vinegar, Sriracha Sauce and ginger zest in the mixing bowl and simmer for 5 min./100°C/speed 2.

Add chestnuts

Add the fried game ground meat and the chopped chestnuts to the mixing bowl and stir in for 3 min./100°C/Reverse Rotation speed 1. Season with salt and pepper.

Prepare iceberg lettuce

Divide the iceberg lettuce in the middle, remove the stalk and carefully remove the individual leaves.

Fill and serve wraps

Place 1-2 spoons of the game ground meat and chestnut mixture in a lettuce leaf and roll up. Sprinkle with spring onions, coriander, chili flakes and sesame and serve.
