Description

This mandarin sour cream cake is a real classic and super easy to prepare. I've been making it for years and it's always a hit, especially for birthdays or as a cake for Sunday coffee. The cake is moist and the combination of mandarins and sour cream is simply unbeatable. The preparation is very simple and can be done in no time at all with the Thermomix®. An absolute favorite recipe that I can only recommend to everyone! Thanks to the mandarins, it is a particular delight in spring.

Ingredients (11 ingredients)

  • 5 piece Egg(s)
  • 300 g Sugar
  • 1 Pck. Vanilla sugar
  • 350 g Flour
  • 1 Pck. Baking powder
  • 125 ml Oil, neutral
  • 175 ml Fanta
  • 600 g Whipping cream
  • 5 Pck. Vanilla sugar
  • 3 Pck. Cream stiffener
  • 500 g Sour cream

Preparation (9 steps)

Beat eggs, sugar and vanilla sugar

Put 5 eggs, 300 g sugar and 1 packet of vanilla sugar into the mixing bowl and beat for 3 min./speed 4 until frothy.

Mix and stir in flour and baking powder

Add 350 g flour and 1 packet of baking powder to the mixing bowl and stir in for 20 sec./speed 3.

Stir in oil and Fanta

Thermomix® Setting

Put 125 ml neutral oil and 175 ml Fanta into the mixing bowl and stir in for 15 sec./speed 3.

Bake the dough

Grease a baking tray. Pour the batter onto the prepared baking tray and spread it evenly. Bake in a preheated oven at 150 °C circulating air for approx. 25 minutes. Then let the cake cool down completely.

Whip the cream until stiff

Put 600 g whipping cream, 3 packets of vanilla sugar and 3 packets of cream stiffener into the mixing bowl. Insert the butterfly and whip until stiff for 2 min./speed 3.5. Remove butterfly.

Stir the sour cream

Put 500 g sour cream and 2 packets of vanilla sugar into the mixing bowl and mix for 20 sec./speed 3.

Fold in mandarins and cream

Thermomix® Setting
15 sec/keine/Speed 2 Reverse

Drain the mandarins and add them to the mixing bowl together with the whipped cream. Carefully fold in for 15 sec./reverse/speed 2.

Spread cream and chill

Spread the cream evenly on the cooled cake and refrigerate the cake for at least 1 hour until the sour cream-mandarin mixture is firm.

Sprinkle with cinnamon sugar

Sprinkle with cinnamon sugar and serve as desired.
