Description

This curd cake with grapes and apricots is a delicious cake that is ideal for summer. With a creamy curd mixture and fresh fruit, it is a light and refreshing dessert. Preparation takes about 95 minutes and yields 12 servings.

Ingredients (15 ingredients)

  • 125 g Butter
  • 250 g Sugar
  • 1 Päckchen Vanilla Sugar
  • 1 Prise Salt
  • 3 Stück Eggs
  • 1 kg Low-fat Curd Cheese
  • 1 Stück Untreated Lemon, grated zest of it
  • 80 g Semolina
  • 1 Päckchen Vanilla Sauce Powder (for 1/2 l Liquid)
  • 1 Teelöffel Baking Powder
  • 80 g Chopped Almonds
  • 3 Eßlöffel Breadcrumbs
  • 250 g Seedless Grapes
  • 1 Dose Apricot Halves (250 g Drained Weight)
  • 30 g Flaked Almonds

Whisk butter until fluffy

Place 125 g butter in the mixing bowl and whisk with the stirring attachment for 2 min./speed 3 until fluffy.

Let sugar trickle in

Add 250 g sugar, 1 packet of vanilla sugar and salt to the butter in the mixing bowl and let it trickle in while stirring constantly. Stir in 3 eggs one after the other. Continue stirring until the sugar has dissolved and a light creamy mixture has formed. 3 min./speed 3.

Prepare curd mixture

Drain 1 kg low-fat curd cheese. Mix grated zest of 1 untreated lemon, 80 g semolina, 1 packet of vanilla sauce powder (for 1/2 l liquid) and 1 teaspoon of baking powder. Stir into the sugar-egg mixture. Then add drained curd cheese and 80 g chopped almonds. Stir everything with the stirring attachment for 2 min./speed 3 until smooth.

Prepare mold and pour in dough

Grease a cake tin (28 cm Ø). Sprinkle with 3 tablespoons of breadcrumbs. Swivel the mold back and forth so that they are evenly distributed. Pour in the dough, smooth it out.

Prepare fruit

Wash 250 g seedless grapes, halve them. Place 1 small can of apricot halves (250 g drained weight) on a sieve and drain (use juice for other purposes). Halve the fruits.

Spread fruit and bake

Spread prepared fruit on the dough. Bake in the preheated appliance on the rack of the lowest shelf for approx. 35 minutes at 170°C circulating air.

Roast almonds and sprinkle cake

Roast 30 g flaked almonds in a coated pan. Remove cake, let cool slightly on a cake rack. Sprinkle warm cake with almonds.
