Description

This fruit cake with curd cheese-yogurt-cream is a delicious dessert that is perfect for summer. The cake consists of a shortcrust pastry base, a creamy curd cheese-yogurt filling and fresh fruit of your choice. The preparation takes about 70 minutes and yields 12 servings. Ideal for a coffee party or as a sweet ending to a festive meal.

  • 250 g Flour
  • 125 g Butter
  • 75 g Sugar
  • 1 Pck. Vanilla sugar
  • 1 Prise Salt
  • 1 Stück Egg
  • 500 g Curd cheese
  • 250 g Yogurt
  • 100 g Sugar
  • 1 Pck. Vanilla sugar
  • 1 EL Lemon juice
  • 0.5 Stück Lemon zest (grated)
  • 500 g Fruit (of your choice)
  • Icing sugar (optional for glaze)
  • Lemon juice (optional for glaze)

Prepare shortcrust pastry

Put flour, butter in pieces, sugar, vanilla sugar, salt and egg into the mixing bowl and process for 2 min./kneading stage to a smooth dough.

Cool dough

Wrap the dough in plastic wrap and refrigerate for 30 minutes.

Preheat oven

Preheat oven to 180°C top/bottom heat.

Roll out the dough and place in shape

Roll out the dough on a floured work surface and place in a greased cake tin (26 cm diameter). Form an edge.

Pre-bake dough base

Prick the dough base several times with a fork and pre-bake in the preheated oven for about 15 minutes.

Prepare curd cheese-yogurt-cream

Put curd cheese, yogurt, sugar, vanilla sugar, lemon juice and lemon zest in the mixing bowl and stir for 30 sec./speed 3.

Spread cream on dough base

Spread the curd cheese-yogurt-cream on the pre-baked dough base.

Prepare fruit and place on cake

Wash and clean the fruit and spread on the cream as desired.

Bake cake

Bake the cake in the preheated oven for about 30 minutes until golden brown.

Let the cake cool down

Remove the cake from the oven and let it cool on a wire rack.

Prepare glaze (optional)

For the glaze, stir icing sugar with lemon juice and pour over the cooled cake.
