Description

This No Bake Passion Fruit Cheesecake is a refreshing treat for the summer. The combination of creamy cream cheese and exotic passion fruit makes this cake a special dessert. The preparation is simple and possible without baking, ideal for warm days. The cake is prepared in about 30 minutes and then needs to be chilled for several hours. Perfect for birthdays or other festive occasions.

Ingredients (12 ingredients)

  • 200 g Butter Biscuits
  • 100 g Butter
  • 600 g Philadelphia Cream Cheese Nature
  • 300 g Yogurt
  • 2 EL Lemon juice
  • 6 Blatt Gelatin
  • 100 g Sugar
  • 1 EL Vanilla extract
  • 500 ml Passion fruit or Maracuja Juice
  • 2 EL Sugar
  • 6 Blatt Gelatin
  • 50 g White Chocolate

Preparation (12 steps)

Prepare springform pan and crush biscuits

Line the springform pan with baking paper. Place the butter biscuits in the mixing bowl. Process into crumbs for 15 sec./level 7. Transfer to a bowl.

Melt butter

Thermomix® Setting

Put 100g butter in the mixing bowl and melt for 3 min./50°C/level 2.

Prepare crumb base

Add crumbs to the melted butter in the mixing bowl. Mix for 10 sec./level 2 and then spread the mixture on the bottom of the springform pan. Press evenly with the back of a spoon. Refrigerate.

Soak gelatin

Soak 6 sheets of gelatin in a container with cold water for about 10 minutes.

Prepare Cheesecake mixture

Put 600g Philadelphia Cream Cheese Nature, 300g Yogurt, 2 tbsp Lemon juice, 100g Sugar and 1 tbsp Vanilla extract in the mixing bowl and stir for 20 sec./level 3.

Dissolve gelatin

Squeeze out the gelatin a little and put it in a pan and heat slowly until the gelatin has dissolved. Add some cheesecake mixture and dissolve again well.

Complete Cheesecake mixture

Then quickly stir the dissolved gelatin into the cheesecake mixture. Immediately spread on the base and then refrigerate the cake for at least 1 hour.

Prepare passion fruit jelly - soak gelatin

Soak 6 sheets of gelatin in a container with cold water for about 10 minutes.

Prepare passion fruit jelly - prepare jelly

Thermomix® Setting
5 min/212°F/Speed 1 212°F

Put 500 ml passion fruit juice and 2 tbsp sugar in the mixing bowl and bring to the boil for 5 min./100°C/level 1.

Prepare passion fruit jelly - dissolve gelatin

Squeeze out the gelatin a little and put it in a pan and heat slowly until the gelatin has dissolved. Add some passion fruit juice and sugar and dissolve again well.

Prepare passion fruit jelly - complete jelly

Then slowly pour the dissolved gelatin into the remaining passion fruit juice while stirring. Let the jelly rest for 20 minutes, then pour it onto the prepared cheescake. Refrigerate for at least 4 hours or, even better, overnight.

Decoration

Shave off 50g white chocolate with a knife and spread it on top. To serve, heat a knife in hot water and loosen the cheesecake from the edge of the springform pan.
