Description

This cherry cake with crispy butter crumble topping is an absolute classic and tastes simply heavenly! I especially like to make it in the summer when the cherries come fresh from the market. The juicy cherry pudding in combination with the buttery crumble is simply irresistible. The cake is perfect for birthdays, coffee parties or just for enjoying. It can also be prepared well in advance and stays fresh for a few days. A piece of childhood memory that always brings joy!

Ingredients (10 ingredients)

  • 720 ml Cherries (jar)
  • 1 Pck. Pudding powder
  • 240 g Sugar
  • 400 g Flour
  • 1 Pck. Vanilla sugar
  • 1 Msp. Baking powder
  • 1 Prise(n) Salt
  • 2 piece Egg yolk
  • 250 g Butter
  • 1 tsp Icing sugar

Preparation (5 steps)

Prepare cherries and cook pudding

Thermomix® Setting
7 min/212°F/Speed 2 100

Place the cherries in a sieve and drain, collecting the juice. Take 6 tablespoons of the cherry juice and mix in a bowl with the pudding powder and 40 g of sugar. Top up the remaining cherry juice with water to 450 ml. Pour the cherry juice mixture into the mixing bowl and cook for 7 min./100°C/speed 2. Add the stirred pudding powder and stir in for a further 1 min./100°C/speed 2. Carefully fold in the cherries and let the pudding cool down a little.

Prepare crumble topping

Thermomix® Setting
2 min/Kneading speed

Put 400 g flour, 200 g sugar, 1 packet of vanilla sugar, 1 pinch of baking powder and 1 pinch of salt into the mixing bowl and mix for 10 sec./speed 4. Add 2 egg yolks and 250 g butter in pieces and process into crumbles for 2 min./kneading stage. If necessary, help with the spatula.

Form crumble base

Put 2/3 of the crumble into a greased springform pan (26 cm) and press down with your hands to form a smooth base.

Top the cake

Spread the cherry pudding evenly on the crumble base. Sprinkle the remaining crumble on top.

Bake cake

Bake the cake in a preheated oven at 200°C (top/bottom heat) or 175°C (fan oven) for 35 - 40 minutes. After baking, let it cool down and dust with 1 teaspoon of icing sugar.
