Description

This heart-shaped strawberry cake is a real eye-catcher and tastes simply delicious! I especially like to bake it in the spring when strawberries are in season. The fluffy dough, the creamy filling and the fruity strawberry sauce harmonize perfectly with each other. An ideal recipe for birthdays or other festive occasions. The cake can be prepared well in advance, so you have less stress on the day itself. If you like, you can use a few fresh mint leaves for decoration. An absolute must for all strawberry lovers!

Ingredients (14 ingredients)

  • 240 g Margarine
  • 220 g Sugar
  • 1 Pck. Vanilla sugar
  • 6 piece Eggs (size L)
  • 8 tbsp Milk
  • 320 g Wheat flour Type 405
  • 6 tsp Baking powder
  • 600 ml Whipping cream
  • 4 tbsp Icing sugar
  • 2 Pck. Cream stiffener
  • 800 g Strawberries (fresh or frozen)
  • 1.5 tsp Cornstarch
  • 3 tbsp cold Water
  • 400 g Strawberries (fresh)

Preparation (11 steps)

Prepare baking pan and preheat oven

Preheat the oven to 180°C (top/bottom heat). Grease a heart-shaped baking pan thoroughly and dust with flour to prevent the dough from sticking.

Prepare dough

Put 240 g margarine, 220 g sugar and 1 packet of vanilla sugar into the mixing bowl and stir for 3 min/speed 4 until creamy. Then add 6 eggs (size L) one at a time and stir in for 20 sec/speed 3 each. Add 8 tablespoons of milk and mix for another 20 sec/speed 3.

Stir in flour mixture

Mix 320 g wheat flour Type 405 and 6 tsp baking powder in a separate bowl. Add the flour mixture spoonful by spoonful to the mixing bowl and stir in for 1 min/speed 3 until a smooth dough forms. If necessary, use the spatula to push down from the edge.

Bake dough

Pour the dough into the prepared heart-shaped baking pan and smooth it out. Bake in the preheated oven for 25-30 minutes until golden brown. Perform a toothpick test to make sure the cake is cooked through.

Beat cream until stiff

Thermomix® Setting
2 min/Speed 3.5

Put 600 ml whipping cream, 1 tbsp icing sugar and 2 packets of cream stiffener into the mixing bowl. Beat with the butterfly for 2 min/speed 3.5 until stiff. Place the whipped cream covered in the refrigerator.

Prepare strawberries

Clean, wash and cut 800 g strawberries for the filling into small pieces. (Thaw frozen strawberries and also cut into small pieces).

Prepare strawberry cream

Take ⅔ of the chilled, stiff whipped cream out of the refrigerator and put it in another bowl. Carefully fold in the prepared strawberry pieces.

Fill and spread cake

Cut the cooled cake horizontally once and fill with the strawberry cream. Place the second half on top and spread the remaining cream around the heart.

Prepare strawberry sauce

Thermomix® Setting
30 sec/Speed 8

Clean, wash and put 200 g strawberries into the mixing bowl. Puree for 30 sec/speed 8. Transfer the puree to a saucepan.

Thicken sauce

Mix 1.5 tsp cornstarch with 3 tbsp icing sugar and 3 tbsp cold water until smooth. Add the starch mixture to the strawberry puree in the saucepan and bring to a boil briefly while stirring until the sauce thickens. Let cool completely.

Decorate cake

Pour the cooled strawberry sauce over the heart and let it drip down the edge. Serve remaining sauce with the cake. Wash, clean and halve the remaining 400 g strawberries and decorate the cake with them.
