About this recipe

Poppy Seed Cake Artje – the name might sound a bit unusual, but this cake is a real classic in my family. My Grandma Artje always baked it for birthdays, and the recipe has been passed down through generations. It is a simple, honest cake that convinces with the combination of juicy poppy seed topping, crispy crumbles, and a slightly sour curd cheese. The ingredients are deliberately kept simple. The butter in the dough ensures a shortbread consistency and a full flavor. The sugar naturally contributes to the sweetness, but it also helps to whip the butter and make the dough smoother. The eggs bind the ingredients and give the dough stability. The flour forms the basic structure of the dough, while the baking powder provides the necessary looseness. The curd cheese in the topping gives the cake a pleasant acidity and juiciness, which is further enhanced by the lemon juice. The poppy seed mix is a practical ingredient that gives the topping the typical poppy seed flavor. Whipped cream stiffener ensures that the topping does not become too liquid during baking. Finally, the crumbles are the icing on the cake: butter, sugar, flour, and vanilla sugar melt into a crispy crust that provides a nice contrast to the soft topping. When preparing with the Thermomix®, it is important to observe the order of the ingredients. Always start with the soft ingredients like butter and sugar so that they mix well. When making the dough, it is important not to knead it for too long, as it can otherwise become tough. The Patix dough knife is ideal here because it processes the dough gently. When making the topping, make sure that all ingredients are well mixed, but not for too long, otherwise the curd cheese may become liquid. The crumbles should be crumbly, but not too fine. If they are too fine, they will become hard when baking. Variations are of course possible. If you like it a little fruitier, you can add a few fresh berries to the topping. A few grated lemon peels in the dough or topping also provide a fresh note. For a vegan version, butter and eggs can be replaced with plant-based alternatives. However, make sure that the consistency of the dough and topping may be slightly different as a result. The Poppy Seed Cake Artje is best served lukewarm, with a cup of coffee or tea. A dollop of whipped cream or vanilla ice cream also goes perfectly with it. The cake stays fresh in the refrigerator for a few days. It can also be prepared well in advance: the dough and crumbles can already be prepared the day before and stored in the refrigerator. However, you should only prepare the topping shortly before baking, as it will otherwise become too liquid.
