Description

This currant cake from the Thermomix® is a summery treat with egg yolk, butter, flour and fresh currants. The recipe includes the preparation of a sponge cake and a meringue topping. The preparation time is approx. 90 minutes for a sheet cake. Ideal as a dessert or with coffee, especially suitable for lovers of fruity cakes.

  • 2 EL Water
  • 120 g Sugar
  • 100 g Flour
  • 2 EL Butter, lightly melted
  • 4 Stück Egg white
  • 160 g Sugar
  • 1 Päckchen Vanilla sugar
  • Currants

Beat eggs and sugar

Put 2 egg yolks with 2 tablespoons of water and 120 g of sugar into the mixing bowl and beat for 3 min./speed 4 until the mixture is foamy.

Add flour and melted butter

Add 100 g flour and 2 tablespoons of lightly melted butter alternately to the mixing bowl and stir in for 20 sec./speed 3.

Pour dough into mold and bake

Pour the dough into a greased mold and bake at medium heat for about 30 minutes. Let the base cool down.

Beat egg whites

While the base is baking, put 4 egg whites into the mixing bowl and whisk until stiff with the butterfly for 4 min./speed 3.5.

Fold in sugar and vanilla

Fold 160 g sugar and 1 packet of vanilla sugar into the egg white with the spatula and mix carefully. 1 min./speed 2/reverse

Spread meringue on the cake base

As soon as the base is baked, remove it from the springform pan and spread with the meringue.

Prepare currants

Place the WunderSlicer V2 on the mixing bowl lid. Insert the fine slice. Place the currants in the filling shaft and press through the slicer with light pressure. Catch the sliced ​​currants.

Decorate and bake meringue

Fill 1/3 of the meringue mass into a piping bag and spray a beautiful edge on the cake. Spread the remaining currants on the cake. Bake the cake at low heat until golden brown.
