Description

This apple cake with cream topping, prepared in the Thermomix®, is a juicy cake classic with apples, hazelnuts and cinnamon. The recipe from the cake category is ideal for festive occasions or the autumnal coffee table. Preparation takes about 70 minutes, of which 30 minutes are active working time, and yields 12 servings. A delicious dessert for the whole family.

  • 150 g Butter or margarine
  • 125 g Sugar
  • 3 Eggs
  • 125 g Hazelnuts, ground
  • 50 g Flour
  • 2 TL Baking powder
  • 1 TL Cinnamon
  • 800 g Apples, coarsely grated
  • 0.5 Tasse Sugar
  • 2 Eggs
  • 1 Lemon, juice of
  • 2 EL Vanilla pudding powder
  • 400 g Sweet cream
  • Cocoa powder for dusting

Preparation (7 steps)

Prepare batter

Thermomix® Setting
2 min/Speed 4

Put 150 g butter or margarine, 125 g sugar and 3 eggs in the mixing bowl and mix for 2 min./level 4. Add 125 g ground hazelnuts, 50 g flour, 2 tsp baking powder and 1 tsp cinnamon and stir in for 20 sec./level 3.

Fill dough in springform pan

Pour the batter into a prepared springform pan (approx. 26 cm diameter) and smooth it out.

Bake batter

Bake the cake in a preheated oven at 160 °C circulating air for approx. 30 minutes. Allow to cool completely after baking.

Prepare apple topping

Thermomix® Setting
8 min/212°F/Speed 2 100

Put 800 g coarsely grated apples, 0.5 cup sugar, 2 eggs, juice of a lemon and 2 tbsp vanilla pudding powder in the mixing bowl and bring to the boil for 8 min./100°C/level 2 while stirring constantly.

Distribute apple topping

Let the apple topping cool slightly and then spread it on the baked cake base in the springform pan. Refrigerate the cake.

Whip cream until stiff

Thermomix® Setting
2 min/Speed 3.5

Insert the butterfly. Put 2 cups of sweet cream (200 g each) in the mixing bowl and whip until stiff for 2 min./level 3.5. Watch the cream so that it does not turn into butter.

Apply cream topping

Spread the whipped cream on the cake and smooth it out. Dust with cocoa powder.
