Preparation (6 steps)
Prepare apples
Preheat oven to 180°C top/bottom heat. Wash, quarter, core and dice 4 apples. Mix 2 tsp cinnamon and 1 tbsp lemon juice and set aside.
Beat eggs
Put 4 eggs and 1 tbsp Erythritol in the mixing bowl and whisk for 3 min./speed 4 until frothy.
Prepare dough
Add 100 g soft butter and 100 g quark and mix for 30 sec./speed 3. Add 75 g almond flour, 100 g ground almonds, 1 tsp baking powder and 1 pinch of salt and mix for 20 sec./speed 3. Add the egg mixture and stir in for 10 sec./speed 2.

Fold in apples and bake
Add the diced apples to the dough and fold in. Line springform pan with baking paper and grease edges well. Pour dough into the pan and bake in the preheated oven for approx. 40-50 minutes.
