Description

This Benjamin-Blümchen cake is a delicious cake for birthdays and other festive occasions. The sponge cake base is filled with a curd cheese cream filling and decorated with cream, hazelnut brittle and chocolate sprinkles. The preparation takes about 3 hours and yields 12 servings. Ideal for children's birthdays and family celebrations.

  • 1 tsp Baking powder
  • 200 g Cream
  • 25 g Cream stiffener
  • 500 g Curd cheese
  • 50 g Sugar

  • 100 g Hazelnut brittle
  • 50 g Chocolate sprinkles
  • 40 g Confetti edible sprinkles

Preparation (11 steps)

Prepare sponge cake base

Preheat the oven to 180°C top/bottom heat. Line a springform pan (26 cm diameter) with baking paper.

Beat eggs and sugar

Put 4 eggs and 150g sugar into the mixing bowl and beat for 4 min/speed 4 until the mixture is foamy.

Mix and fold in flour and baking powder

Mix 150g flour and 1 tsp baking powder. Then fold in 3 sec/speed 3 under the egg-sugar mixture. Use a spatula to fold everything in from the edge.

Bake sponge cake

Pour the dough into the prepared springform pan and bake in the preheated oven for approx. 20-25 minutes. Do a toothpick test.

Let the sponge cake cool

Remove the sponge cake base from the oven and let it cool completely.

Prepare filling

For the filling, put 200g cream and 25g cream stiffener into the mixing bowl and whip until stiff with the butterfly 2 min/speed 3.5. Observe the consistency.

Stir curd cheese and sugar

Put 500g curd cheese and 50g sugar into the mixing bowl and stir for 20 sec/speed 3.

Fold in cream

Carefully fold the whipped cream into the curd cheese-sugar mixture with a spatula.

Fill the cake

Cut the cooled sponge cake base horizontally once. Spread the lower base with half of the curd cheese cream filling. Place the second base on top and spread with the remaining filling.

Decorate cake

Decorate the cake with 200g cream and 25g cream stiffener. To do this, put the cream and the cream stiffener into the mixing bowl and whip until stiff with the butterfly 2 min/speed 3.5. Observe the consistency. Decorate the cake with hazelnut brittle and chocolate sprinkles as desired.

I still remember how my grandma baked it for me when I was little - of course with lots of love and even more colorful sprinkles! The name comes, of course, from the popular talking elephant, and the cake is intended to spread good cheer with its cheerful look and light taste. The base of this cake is a light sponge cake. The eggs provide the necessary binding and lightness, while the sugar contributes sweetness and a fine caramel note. The flour gives the whole thing structure, and the baking powder helps the dough to rise nicely. For the filling we use curd cheese, which provides a pleasant acidity and creaminess. The cream makes the filling particularly light and airy, and cream stiffener ensures that everything retains its shape. The hazelnut brittle brings a crunchy contrast to the soft filling and a nutty taste, while the chocolate sprinkles and confetti sprinkles provide the colorful look and the additional sweet kick. When preparing in the Thermomix®, it is important to beat the eggs and sugar long enough so that the sponge cake becomes nice and airy. Make sure that the cream is not beaten for too long, otherwise it will become buttery. It is better to stop a little earlier and keep an eye on the consistency. When folding in the flour and cream, you need a delicate touch - here the spatula is your best friend to preserve the lightness. If you like it a little fruitier, you can add fresh berries such as strawberries or raspberries to the filling.
