Description

This yogurt and blackberry cake is a real summer treat! Its soft texture and delicate yogurt flavor blend perfectly with the sweetness of fresh blackberries. I often prepare it for Sunday breakfast or for a delicious snack with friends. It is very easy to make and the result is always a success. If you want, you can also add some chocolate drops to the dough for an even more delicious touch. Serve it with a scoop of vanilla ice cream for an unforgettable dessert! Also perfect for an outdoor brunch.

Ingredients (12 ingredients)

  • 210 g blackberries
  • 125 g plain yogurt
  • 2 uova eggs
  • 180 g sugar
  • 100 g butter
  • 200 g flour
  • 16 g baking powder
  • 60 g starch
  • 20 g sugar
  • 40 g blackberries
  • powdered sugar
  • vanilla ice cream

Insert the eggs and sugar into the bowl. Whip for 3 Min./Stufe 4.

Add the yogurt and melted butter to the mixture in the bowl. Mix for 20 Sek./Stufe 3.

Add the flour gradually to the bowl. Mix for 30 Sek./Stufe 3.

Adding baking powder and starch

Add the baking powder and starch to the bowl. Mix for 20 Sek./Stufe 3.

Incorporate the blackberries

Thermomix® Setting
10 sec/Linkslauf Speed 2 Reverse

Gently add 210 g of blackberries to the dough in the bowl. Mix with the spatula for 10 Sek./Linkslauf Stufe 2 to avoid damaging the blackberries.

Pour into the mold

Pour the dough into a well-greased and floured 24 cm mold. Level the surface.

Decorate with blackberries

Distribute 40 g of blackberries on the surface of the cake.

Baking in the oven

Bake in a preheated fan oven at 170° C for about 45 minutes, or in a static oven at 180° C for the same time. (This step is not performed with the Thermomix).

Cooling and serving

Once cooked, remove from the oven and let the cake cool slightly. Sprinkle with powdered sugar and serve with vanilla ice cream.
