Description

This stuffed Spanish omelette is a delight that always triumphs. The combination of potatoes, eggs, ham and cheese makes it a very tasty and hearty dish, ideal to share in a family meal or as an aperitif with friends. The preparation is simple, although it requires a little patience to curdle the omelette to perfection. I make it often and always receive praise. Go ahead and try it, you'll love it! You can use different types of cheese to vary the flavor. It is perfect for any time of the year and can be served both hot and cold.

Ingredients (6 ingredients)

  • 6 piece eggs
  • 3 piece potatoes
  • 150 g Serrano or Iberian ham in slices
  • 100 g Wedge cut cheese
  • 100 ml Oil
  • 1 pinch Salt

Potato preparation

Peel and cut the potatoes into thin slices. Put the potatoes in the Thermomix bowl. Add oil to cover the potatoes and a pinch of salt. Program 20 Min./Varoma/Reverse rotation/Spoon speed.

Egg mixture preparation

While the potatoes are cooking, beat the eggs in a large bowl with a pinch of salt. Once the potatoes are cooked, drain the oil (reserving a little for the pan) and add them to the bowl with the beaten eggs. Mix well.

First layer of the omelette

Heat a little of the reserved oil in a non-stick frying pan over medium heat. Pour half of the potato and egg mixture into the pan. Cook for a few minutes until the bottom begins to set.

Add the filling

Distribute the wedge cut cheese on the first layer of the omelette. Then, add the slices of Serrano ham on top of the cheese.

Second layer of the omelette

Pour the second half of the potato and egg mixture over the filling. Cook for a few minutes until the bottom is set.

Turn the omelette over

With the help of a plate or a lid, carefully turn the omelette over. Cook for a few more minutes until it is golden brown on both sides and completely set in the center.

Serve

Remove the omelette from the pan and serve hot or cold. Cut into portions and enjoy.
