Description

Delicious dumplings filled with ham and cheese, perfect as a snack or for a party.

Ingredients (11 ingredients)

  • 300 g Flour - Type 405 or Type 550
  • 200 ml Whole milk, lukewarm
  • 21 g Fresh yeast
  • 2 EL Vegetable oil
  • 1 TL Salt
  • 1 Prise Sugar
  • 200 g Cooked ham
  • 200 g Gouda
  • 10 TL Creme Fraiche
  • 3 El Vegetable oil
  • 100 g Gouda, freshly grated

Preparation (11 steps)

Mix flour, salt and sugar

Put 300 g flour, 1 tsp salt and 1 pinch of sugar into the mixing bowl and mix for 10 sec/speed 3.

Prepare milk and yeast

Put 200 ml lukewarm milk (not warmer than 40 degrees) and 21 g fresh yeast into the mixing bowl and stir for 2 min/37°C/speed 2 to dissolve the yeast.

Knead the dough

Thermomix® Setting
5 min/Kneading speed

Add the yeast milk and 2 tbsp vegetable oil to the flour in the mixing bowl and knead for 5 min/kneading level to a smooth dough. If necessary, add flour or milk spoonful by spoonful until the consistency is right.

Let the dough rise

Place the dough in a bowl, cover with a kitchen towel and let rise in a warm, draft-free place for at least 30 minutes.

Preheat oven

Preheat the oven to 250 degrees top/bottom heat.

Shape and cut the dough

Form the dough into a roll about 30 cm long and cut into about 10 even pieces.

Roll out and spread the dough

Roll out each piece of dough into a thin flatbread (approx. 13-17 cm in diameter) and spread with approx. 1 tsp Creme Fraiche.

Prepare ham and cheese

Cut 200 g cooked ham and 200 g Gouda into strips.

Cover and roll up the flatbread

Distribute ham and cheese strips evenly on the flatbread. Fold the sides slightly over the filling, roll up not too tightly (fold over about twice) and press the sides down a little.

Prepare the pastries

Place the 10 cheese and ham pastries on a baking sheet lined with baking paper. Spread 3 tbsp vegetable oil on the pastries with a brush and sprinkle 100 g freshly grated Gouda over them.

Bake

Place the baking sheet in the preheated oven and bake the pastries for approx. 10-15 minutes until lightly browned.
