Description

This grilled beef fillet, topped with a balsamic sauce flavored with pepper and rosemary, is a simple yet elegant dish, perfect for a special occasion or a refined dinner. The sauce, prepared with the Thermomix®, is smooth and full of flavors, enhancing the tenderness of the meat. I particularly like the aromatic touch of fresh rosemary, which goes perfectly with the balsamic. This dish is quick to prepare and always a hit with my guests. Serve with fried potatoes for a complete and delicious meal. A real treat!

Ingredients (8 ingredients)

  • 2 piece beef fillet steaks
  • 20 cl veal stock
  • 20 g butter
  • 1 c. à s. balsamic vinegar
  • Olive oil
  • 1 branche rosemary
  • Fine salt
  • 5 5 berries mix

Preparation of ingredients

Take the meat out of the refrigerator at least half an hour before cooking so that it reaches room temperature. Finely chop a few sprigs of rosemary. Set aside.

Reduction of balsamic vinegar

Thermomix® Setting
5 min/212°F/Speed 1 100

Pour the balsamic vinegar into the Thermomix bowl. Program 5 Min./100°C/Stufe 1 without the measuring cup to slightly reduce the vinegar.

Addition of aromatics and veal stock

Thermomix® Setting
10 min/194°F/Speed 2 90

Add the chopped rosemary, a tablespoon of 5 berries mix and the veal stock to the bowl. Program 10 Min./90°C/Stufe 2 to reduce the sauce.

Incorporation of butter

Thermomix® Setting
1 min/140°F/Speed 3 60

Add the butter cut into pieces in the bowl. Program 1 Min./60°C/Stufe 3 to bind the sauce. Check the seasoning and adjust if necessary.

Set aside the sauce

Pour the sauce into a container and keep warm.

Cooking the beef steaks

Coat the beef steaks with olive oil. Heat a pan or grill. Grill the beef steaks for more or less time depending on your taste (rare, medium, well done).

Service

Serve the grilled beef steaks topped with balsamic sauce with pepper and rosemary. Serve with fried potatoes or a garnish of your choice.
