Description

This Thermomix® recipe for braised beef shoulder with celery potato purée is a hearty main course with beef, carrots, celery and onions. Preparation in the Thermomix® takes a total of 150 minutes, the active working time is about 45 minutes. The recipe is designed for 4 servings and is particularly suitable as a festive family meal or for the winter time. Ideal for those who love hearty and traditional cuisine.

Ingredients (18 ingredients)

  • 1.2 kg round shoulder of beef
  • Salt
  • 2 Stück Carrots
  • 100 g Celeriac
  • 2 Stück Onions
  • 2 Zehen Garlic
  • 200 ml Red wine
  • 1 Blatt Bay leaf
  • 3 Stück Allspice whole
  • 4 Stück Peppercorns
  • 1 Zweig Thyme
  • 250 g Potatoes
  • 300 g Celeriac
  • 200 g Cream
  • 1 EL Butter
  • nach Geschmack Nutmeg
  • 80 g Pine nuts
  • 1 TL Gravy browning dark

Preparation (13 steps)

Prepare vegetables

Peel and roughly chop the carrots, celeriac and onions. Peel the garlic cloves.

Sear the roast (NOT in the Thermomix!)

Preheat the oven to 160°C circulating air. Sear the round shoulder of beef (1.2 kg) in a heavy pan or roasting pan all over, salting lightly. Remove from the pan and set aside.

Roast vegetables (NOT in the Thermomix!)

Sauté the prepared vegetables, onions and garlic in the same pan in which the meat was seared.

Braising in the oven (NOT in the Thermomix!)

Add the meat back to the vegetables and deglaze with red wine (200 ml). Add bay leaf, allspice, peppercorns and thyme sprig. Close the pan or roasting pan with a lid and braise in the oven on a medium shelf for 2 hours.

Prepare potatoes and celery

Peel potatoes (250 g) and place in the simmering basket. Peel celeriac (300 g) and cut into approx. 1 cm cubes.

Steam potatoes

Put 500 ml water in the mixing bowl, insert simmering basket with the potatoes and steam for 12 Min./Varoma/level 1.

Cook celery

Thermomix® Setting
15 min/194°F/Speed 1 90

Remove simmering basket and set aside. Empty water from the mixing bowl. Add celery cubes and cream (200 g) to the mixing bowl and cook for 15 Min./90°C/level 1.

Purée celery and potatoes

Thermomix® Setting
30 sec/Speed 4

Add the steamed potatoes to the celery in the mixing bowl. Mix for 30 sec./level 4. Push down with the spatula.

Refine celery potato purée

Thermomix® Setting
10 sec/Speed 3

Add butter (1 tbsp), salt and nutmeg and stir for 10 sec./level 3.

Roast pine nuts

Toast pine nuts (80 g) in a pan without fat over medium heat until golden brown. Set aside.

Prepare sauce

Thermomix® Setting
5 min/212°F/Speed 2 100

Remove roast from the oven and pass the roasting set with the vegetables through a sieve into the mixing bowl. Boil for 5 Min./100°C/level 2.

Thicken sauce

Thermomix® Setting
10 sec/Speed 3

Add gravy browning dark (1 tsp) and stir for 10 sec./level 3.

Arrange

Cut the roast, arrange with celery potato purée and serve garnished with the sauce and pine nuts.
