Description

This stewed rhubarb is a delightful and simple dessert or breakfast topping. I've been making this recipe for years, and it's always a hit! The rhubarb softens beautifully, creating a sweet and slightly tart compote that's perfect on yogurt, ice cream, or even just on its own. It's especially wonderful in the spring when rhubarb is in season. A touch of vanilla and lemon brightens the flavors, and a tiny drop of red food coloring enhances the lovely pink hue. It's quick to make and tastes absolutely delicious!

Ingredients (5 ingredients)

  • 250 g rhubarb
  • 100 g sugar
  • 1 piece lemon
  • 0.5 tsp vanilla bean paste
  • 1 drop red food colouring gel

Preparation (3 steps)

Combine ingredients in the Thermomix

Add 250g rhubarb, 100g sugar, the juice of 1 lemon, ½ tsp vanilla bean paste, a drop of red food coloring gel, and 2 tbsp water to the Thermomix bowl.

Simmer the compote

Cook for 10 mins/100°C/Stufe 1, stirring occasionally with the spatula to ensure even cooking. The rhubarb should soften and almost collapse, and the mixture should thicken.

Cool and serve

Transfer the rhubarb compote to a bowl and let it cool completely before serving.
