Description

This hearty beef roast from the Thermomix® is an ideal main course for the winter season or festive occasions. The main ingredients are beef pot roast, red wine, shallots, carrots, and beef stock. Preparation in the Thermomix® takes about 90 minutes, of which 45 minutes are active work. The recipe yields 6 servings and is perfect for Sunday cooking or a family meal.

Ingredients (16 ingredients)

  • 1.5 kg Beef pot roast - from the leg or shoulder
  • 800 ml Beef stock - from a jar or homemade
  • 400 ml Dry red wine - alternatively grape juice with 100% direct juice
  • 200 g Shallots
  • 200 g Carrots
  • 200 g Celeriac
  • 200 g Leek
  • 2 Stk. Bay leaves
  • 2 EL Cornstarch
  • 1 EL Tomato paste
  • 1 EL Sugar
  • 1 EL Clarified butter
  • nach Geschmack Salt
  • nach Geschmack Black pepper from the mill
  • nach Geschmack Medium-hot mustard - to taste
  • Fresh parsley - for serving

Preparation (13 steps)

Preheat oven

Preheat the oven to 160 °C top / bottom heat. This is a preparation step and takes place outside of the Thermomix.

Prepare meat

If necessary, remove any skin and tendons from the beef roast and pat dry with a kitchen towel. Salt on all sides. This is a preparation step and takes place outside of the Thermomix.

Prepare vegetables

Peel the shallots and halve them lengthwise. Peel the carrots and cut into thick slices. Peel the celeriac and cut into thick cubes. Wash, clean and cut the leek into thick strips. This is a preparation step and takes place outside of the Thermomix.

Sear meat

Heat the clarified butter in a large roaster and sear the roast over high heat for 3-4 minutes on all sides. Then remove the roast and season on all sides with black pepper from the mill. This is a preparation step and takes place outside of the Thermomix.

Sauté vegetables

Add the chopped vegetables, tomato paste and sugar to the roaster, stir and sauté for about 5 minutes. This is a preparation step and takes place outside of the Thermomix.

Prepare sauce and braise roast

Deglaze with red wine and let it reduce significantly. Pour in beef stock, add bay leaves and the seared beef. Cover and place in the oven on the middle rack for about 1 to 1.5 hours, turning once. This is a preparation step and takes place outside of the Thermomix.

Let roast rest

After the cooking time, wrap the roast in aluminum foil and let it rest. This is a preparation step and takes place outside of the Thermomix.

Strain sauce

Pour the vegetables with the cooking liquid through a sieve into a pot and strain the remaining vegetables. Remove the vegetables. This is a preparation step and takes place outside of the Thermomix.

Thicken sauce

Pour the sauce into the mixing bowl and bring to a boil for 5 min./100°C/speed 2.

Add starch

Thermomix® Setting
2 min/212°F/Speed 2 100

Mix cornstarch with water. Set the Thermomix to 2 min./100°C/speed 2 and slowly pour the mixed cornstarch through the lid opening. Let the sauce reduce.

Season sauce

Season the sauce with salt, pepper and mustard. This is a preparation step and takes place outside of the Thermomix.

Chop parsley

Thermomix® Setting
3 sec/Speed 8

Place the parsley in the mixing bowl and chop for 3 sec./speed 8. If necessary, scrape down the sides with the spatula and repeat the process.

Arrange and serve

Cut the beef roast into slices and arrange on a preheated serving platter. Sprinkle with the chopped parsley and serve quickly. Serve the sauce with it. This is a preparation step and takes place outside of the Thermomix.
