Description

Braised beef in Burgundy style is a hearty main course with beef, shallots, carrots, and bacon cubes, prepared in the Thermomix®. The recipe is particularly suitable for festive occasions or the winter season. The preparation takes a total of 240 minutes, with an active working time of about 45 minutes. This dish is ideal for 6 servings and a hearty family meal.

Ingredients (16 ingredients)

  • 1.5 kg Beef (for braising)
  • 10 Shallots
  • 2 Carrots
  • 2 Garlic cloves
  • 60 g Butter
  • 200 g Diced bacon
  • 60 g Wheat flour Type 405
  • 250 ml Beef broth
  • 1 Flasche(n) Dry red wine (Burgundy)
  • Salt
  • Pepper
  • 2 Stiel(e) Parsley
  • 2 Stiel(e) Thyme
  • 1 Lorbeerblatt Bay leaf
  • 1 Zweig(e) Rosemary
  • 250 g Mushrooms

Preparation of the ingredients

Cut the beef into 3-4 cm cubes. Peel the shallots. Peel the carrots and cut into approx. 0.5 cm thick slices. Peel the garlic. Clean the mushrooms and halve or quarter them depending on their size. Wash the parsley and thyme and tie them together with the bay leaf and rosemary sprig to form a bouquet garni with kitchen twine.

Chop and sauté shallots and bacon

Place the shallots in the mixing bowl and chop for 3 sec/speed 5. Add the diced bacon and sauté for 3 min/120°C/speed 1. Use a spatula to push down the sides.

Remove shallots and bacon

Remove the shallots and bacon from the mixing bowl and set aside.

Chop carrots

Put the carrots in the mixing bowl and chop for 4 sec/speed 5. Use a spatula to push down the sides.

Sear the meat (NOT in the Thermomix!)

Melt the butter in a large roasting pan. Sear the meat in batches on all sides and remove. Do NOT perform this step in the Thermomix!

Prepare braising in the Thermomix

Place the seared meat, chopped carrots, shallots and bacon in the mixing bowl. Sift flour over the meat.

3 Stunden/212°F/Gentle stir speed/Linkslauf 100 Reverse

Add beef broth and red wine to the mixing bowl. Season with salt and pepper. Add the bouquet garni and garlic cloves. Braise for 3 hours/100°C/Gentle stir setting/Reverse.

Add mushrooms and finish braising

Thermomix® Setting
30 Minuten/212°F/Gentle stir speed/Linkslauf 100 Reverse

After 3 hours, add the prepared mushrooms and braise for another 30 minutes/100°C/Gentle stir setting/Reverse.

Serving

Remove herbs and serve the dish with bread.
