Description

These poppy seed wreaths are a real eye-catcher on any breakfast table, especially at Easter! The fluffy yeast dough harmonizes wonderfully with the aromatic poppy seed filling. I have been baking them since my childhood and they are always a highlight. The preparation is a bit more complex, but the result is worth it. The rum in the filling gives the wreaths a special touch. If you like, you can add some more lemon zest. They taste delicious both warm and cold!

Ingredients (17 ingredients)

  • 500 g Flour smooth
  • 1 Pkt. Yeast dry yeast
  • 250 ml Milk lukewarm
  • 60 g Sugar fine
  • 110 g Butter
  • 2 piece Egg yolk
  • 1 Prise(n) Salt
  • Poppy seed for sprinkling
  • 200 g Poppy seed ground
  • 100 g Butter melted
  • 80 g Sugar
  • 1 tbsp Vanilla sugar
  • 125 ml Milk hot
  • 1 tbsp Rum
  • Cinnamon
  • Lemons - Peel, grated
  • 1 piece Egg yolk mixed with 1 tbsp milk

Preparation (9 steps)

Mix dry ingredients

10 sec/Speed 4

Add 500 g flour, 60 g sugar, 1 packet dry yeast and 1 pinch of salt to the mixing bowl and mix for 10 sec/speed 4.

Melt milk and butter

Thermomix® Setting
2 min/122°F/Speed 2 50

Add 250 ml lukewarm milk and 110 g butter to the mixing bowl and heat for 2 min./50°C/speed 2 until the butter has melted.

Prepare dough

Thermomix® Setting
3 min/Kneading speed

Add the milk-butter mixture, 2 egg yolks and the remaining ingredients (from step 1) to the mixing bowl and knead for 3 min./kneading stage to form a smooth dough.

Let dough rest

Cover the dough with a cloth and let it rest in a warm place for 30 minutes.

Prepare poppy seed filling

Thermomix® Setting
20 sec/Speed 3

Add 200 g ground poppy seeds, 100 g melted butter, 80 g sugar, 1 tbsp vanilla sugar, 125 ml hot milk, 1 tbsp rum, some cinnamon and some grated lemon zest to the mixing bowl and stir for 20 sec./speed 3. If necessary, help with the spatula.

Preheat oven

Preheat the oven to 200 degrees circulating air.

Shape wreath

Shape the yeast dough into a roll and divide into approx. 14 pieces. Roll out rectangles (approx. 15 cm long and 4-5 cm wide), spread with poppy seed filling 2 cm wide, fold together and press the dough firmly all around and shape into a roll. Then twist 2 finger-thick rolls around each other in a spiral shape and then form into a wreath. Let rest briefly.

Brush wreath

Mix 1 egg yolk with 1 tbsp milk and brush the wreaths with it. Then sprinkle with some poppy seeds.

Bake wreath

Place the wreaths on a baking sheet and bake in a preheated oven at 200 degrees circulating air for approx. 5 minutes. Then reduce the temperature to 180 degrees and bake for another 20 minutes until golden brown.
