Ingredients (16 ingredients)

  • 1 Stück Head of Garlic
  • 3 Stück large Onions
  • 1 Stück Organic Orange
  • 1.8 kg Leg of Lamb (boneless)
  • 1 TL Olive Oil
  • 1 EL Fennel Seeds
  • Salt
  • freshly ground Pepper
  • 5 Stück sprigs Rosemary
  • 0.5 Bund Thyme
  • 0.5 Bund Tarragon
  • 400 ml Lamb Stock (jar)
  • 200 ml Red Wine
  • 100 g liquid Honey
  • 125 g sliced Bacon
  • 2 TL Cornstarch

Preparation (11 steps)

Preheat oven and chop garlic

4 hours before the guests arrive, preheat the oven to 150°C (convection 130°C). Place garlic cloves in the mixing bowl and chop for 3 sec/speed 7. Scrape down the sides with the spatula.

Chop onions

Peel and quarter the onions and place them in the mixing bowl. Chop for 3 sec/speed 5. Scrape down the sides with the spatula.

Prepare leg of lamb

Wash the orange, pat dry and cut into thin slices. Pat the leg of lamb dry. Mix olive oil, fennel seeds, salt and pepper and rub the leg of lamb with it.

Brown leg of lamb

Brown the leg of lamb in a separate pan in a little oil on all sides for about 10 minutes, then place on a deep baking sheet.

Prepare herbs and vegetables

Wash rosemary, thyme and tarragon, shake dry, chop coarsely and distribute around the leg of lamb with orange slices, onion and garlic.

Add stock and wine and roast

Pour lamb stock and red wine over the leg of lamb. Roast in the preheated oven for 2½ hours.

Glaze leg of lamb

30 minutes before serving, remove the roast from the oven. Brush with 2 tbsp honey. Cover with bacon slices and brush again with 2-3 tbsp honey. Turn oven up to 180 degrees (convection 160 degrees).

Prepare gravy

Pour the roasting juices with the orange mixture and herbs through a sieve into a pot. Place the leg of lamb back on the baking sheet. Finish roasting in the oven for about 30 minutes.

Reduce gravy

Reduce the roasting juices from the pot for about 20 minutes. Season with honey, salt and pepper.

Thicken the sauce

Stir cornstarch with 2 tbsp water until smooth, stir into the sauce and bring to a boil.

Arrange and serve

Arrange roast on a platter. Serve with the sauce. Serve with roast potatoes and spring vegetables.
