Description

Homemade potato dumplings from the Thermomix® are a hearty side dish or a vegetarian main course. The main ingredients are floury potatoes, potato starch and wheat flour. With the Thermomix®, preparation is quick and easy. The recipe is designed for 6 servings and the preparation time is about 75 minutes. Ideal for hearty cuisine, as a side dish for festive occasions or as a warming family meal in winter.

Ingredients (8 ingredients)

  • 800 g Potatoes (floury)
  • 0.5 TL Salt
  • 1 Prise(n) Nutmeg
  • 100 g Potato starch
  • 50 g Wheat flour Type 405
  • 1 Egg
  • 100 g Butter
  • 80 g Breadcrumbs

Preparation (8 steps)

Prepare potatoes

Thermomix® Setting

Put 800 g of potatoes (floury), unpeeled, into the steamer basket. Pour 500 ml of water into the mixing bowl, add 0.5 tsp of salt and insert the steamer basket. Close the lid and cook for 20 min./100°C/speed 1.

Let the potatoes evaporate

After cooking, drain the potatoes and let them evaporate in the still hot pot until the peel is dry. This takes about 10 minutes.

Peel and press potatoes

Peel the potatoes and press twice through a potato ricer. Let the pressed potatoes cool down.

Prepare dough

Thermomix® Setting
2 min/Kneading speed

Put the cooled, pressed potatoes in the mixing bowl. Add 0.5 tsp salt, 1 pinch of nutmeg, 100 g potato starch, 50 g wheat flour Type 405 and 1 egg. Knead for 2 min./kneading level to form a dough. If necessary, add a little more starch.

Form dumplings

Form 6 dumplings from the potato mixture with floured hands.

Cook dumplings

Bring a large saucepan of salted water to a boil. Place the dumplings one after the other in the boiling water with a slotted spoon. Bring to a boil and then, with the lid half open, let simmer gently for 15-20 minutes.

Prepare buttered breadcrumbs

Thermomix® Setting
2 min/122°F/Linkslauf Speed 1 50 Reverse

Put 100 g butter in the mixing bowl and melt for 3 min./50°C/speed 1. Add 80 g breadcrumbs and roast lightly for 2 min./50°C/reverse rotation speed 1.

Serve

Remove the dumplings from the water, drain and serve with the buttered breadcrumbs.
