Description

This gnocchi vegetable pan is a quick and easy dish that is perfect for after work. The combination of the soft gnocchi, the aromatic leek and the hearty mushrooms is simply delicious. With a touch of lemon and fresh dill, the dish gets a special touch. I often make this pan when things need to be done quickly and everyone is always enthusiastic. It is vegetarian and can be easily varied, for example with other vegetables or cheese. Try it out, it's worth it!

Ingredients (11 ingredients)

  • 2 Stange Leek
  • 400 g Mushrooms
  • 7 tbsp Rapeseed oil
  • 1000 g Gnocchi
  • 1 tbsp Clear vegetable broth
  • 0.5 piece Lemon
  • 200 g Whipping cream
  • 1 tsp Mustard
  • to taste Pepper
  • to taste Salt
  • 15 g Dill

Preparation (6 steps)

Prepare leek and mushrooms

Halve the leek lengthwise, wash thoroughly and cut into half rings. Clean and quarter the mushrooms. Set both aside.

Fry gnocchi

Heat 3 tbsp rapeseed oil in a pan and fry the gnocchi in it until golden brown all over. Remove the gnocchi and set aside briefly.

Sauté vegetables

Add the remaining oil to the pan and fry the mushrooms and leek in it.

Prepare sauce and simmer gnocchi

Thermomix® Setting
5 min/212°F/Speed 1 100

Put 150 ml water into the mixing bowl, add 1 tbsp vegetable stock and stir for 5 sec./speed 3. Add the fried mushrooms and leek from the pan to the mixing bowl. Add the gnocchi as well and simmer everything for 5 min./100°C/speed 1.

Refine sauce

Thermomix® Setting
1 min/194°F/Speed 1 Linkslauf 90 Reverse

Squeeze out half a lemon. Add 200 g whipping cream, 1 tsp mustard and the lemon juice to the mixing bowl and stir in for 1 min./90°C/speed 1 reverse. Season with pepper and salt.

Arrange

Wash the dill, shake dry and cut into flags. Serve the dish garnished with the dill.
