Description

This venison goulash in dark beer sauce is a hearty and warming dish, perfect for the cold season. I especially like to make it in autumn and winter when it's game season. The dark beer gives the goulash a special touch and the carrots provide a light sweetness. The preparation takes a little time, but the effort is definitely worth it! Served with dumplings or potatoes, it is a feast for the whole family. The dish can also be prepared well in advance and tastes almost even better when reheated.

Ingredients (11 ingredients)

  • 1000 g Venison goulash
  • 1 EL Clarified butter
  • 3 Stück Onion(s)
  • 250 g Carrot(s)
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • nach Geschmack Sugar
  • 2 EL Tomato paste
  • 2 Blatt Bay leaves
  • 1 Flasche Dark beer
  • Cornstarch

Preparation (9 steps)

Prepare onions and carrots

Coarsely dice the onions and clean the carrots and cut into approx. 2 cm pieces. The vegetables will be chopped later in the Thermomix®.

Sear meat

Sear the venison goulash in portions in a pan with the clarified butter from all sides. Then remove the meat and set aside.

Chop onions

Place the diced onions in the mixing bowl and chop for 3 sec./speed 5. Scrape down from the edge with the spatula.

Sauté onions

Add the clarified butter to the onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Add the tomato paste to the onions in the mixing bowl and roast for 2 min./120°C/speed 1.

Deglaze with beer

Pour the dark beer into the mixing bowl and stir for 10 sec./speed 3.

Add goulash and spices

Add the seared meat, carrots, bay leaves, salt, pepper and a pinch of sugar to the mixing bowl and stir for 5 sec./speed 4.

Stew the goulash for 90 min./100°C/Reverse rotation speed 1. If too much liquid evaporates, add some water.

Season and thicken

Season the goulash to taste and, if desired, thicken with some cornstarch mixed in cold water for 10 sec./100°C/Reverse rotation speed 2.
