Ingredients (11 ingredients)

  • 1 kg Pork goulash (shoulder and neck)
  • 300 g Onions
  • 2 Garlic cloves
  • 2 EL Rapeseed oil
  • 2 TL Sweet paprika powder
  • 0.5 TL Caraway seeds
  • 400 g Sauerkraut
  • 800 ml Meat broth
  • 200 g Sour cream
  • 2 Bay leaves
  • Salt and pepper

Preparation (5 steps)

Sear the meat

Cut 1 kg of pork goulash into cubes and sear in a pan with 2 tbsp of rapeseed oil on all sides. Season with salt and pepper.

Chop onions and garlic

Halve 300 g of onions and place in the mixing bowl. Chop for 3 sec./speed 5. Add 2 garlic cloves and chop for 3 sec./speed 7.

Sauté onions and garlic

Add 2 tbsp of rapeseed oil to the onions and garlic in the mixing bowl and sauté for 3 min./120°C/speed 1.

Add ingredients and simmer

90-120 min/212°F/Gentle stir speed 212°F Reverse

Add the seared meat, 400 g sauerkraut, 2 tsp sweet paprika powder, 1/2 tsp caraway seeds, 2 bay leaves and 800 ml meat broth to the mixing bowl. Simmer for 90-120 min./100°C/Reverse/gentle stirring setting until the meat is tender. Stir occasionally and add broth or water if necessary.

Serve

Serve the Szegediner Goulash with 200 g of sour cream.
