Description

This creamy cauliflower cheese gratin from the Thermomix® is a hearty main course with Gouda, cornflakes and a creamy sauce made from milk and flour. Preparation in the Thermomix® takes about 60 minutes, the active working time is about 20 minutes. The recipe is vegetarian and yields 4 servings. Ideal as a warming family meal or for lovers of classic cheese cuisine.

  • 150 g Gouda, in pieces
  • 40 g Cornflakes
  • 40 g Butter
  • 40 g Wheat flour Type 405
  • 500 g Milk
  • 0.5 TL Salt
  • 0.25 TL Pepper
  • 1 Prise Nutmeg
  • 1000 g Cauliflower, in florets

Preparation (7 steps)

Chop cheese

Place 150 g Gouda in pieces into the mixing bowl and chop for 8 sec/speed 7. Transfer one third of the cheese and set aside.

Chop cornflakes

Add 40 g cornflakes to the mixing bowl and chop for 6 sec/speed 4. Transfer and set aside.

Melt butter

Put 40 g butter in the mixing bowl and melt for 3 min/100°C/speed 1.

Prepare roux

Add 40 g wheat flour Type 405 and sauté for 3 min/100°C/speed 1. Meanwhile, preheat the oven to 200 °C top/bottom heat.

Cook sauce

Add 500 g milk, 1/2 tsp salt, 1/4 tsp pepper and 1 pinch of nutmeg and cook for 6 min/90°C/speed 4.

Mix cauliflower and cheese

Distribute 1000 g cauliflower in florets in a casserole dish. Add the remaining chopped cheese to the mixing bowl and mix with the spatula. Then pour the sauce over the vegetables.

Bake gratin

Sprinkle the casserole with the cheese-cornflake mixture and bake in the hot oven for about 20 minutes. Then serve as desired.
