Description

This cauliflower mac and cheese casserole with a Parmesan crust is a hearty main course for the whole family, prepared in the Thermomix®. The main ingredients are cauliflower, macaroni, crème fraîche, Gruyère, and Parmesan. Preparation in the Thermomix® takes about 35 minutes and yields 6 servings. Ideal for lovers of warm cheese dishes and suitable as a vegetarian dish.

Ingredients (16 ingredients)

  • 1 Stück Cauliflower, medium size
  • 300 g Macaroni, short
  • 200 ml Pasta water
  • 200 g Creme Fraiche
  • 200 g Gruyère or Emmental, freshly grated
  • 50 g Parmesan, fresh, finely grated
  • 300 g Cooked ham, diced
  • 2 EL Salt
  • 1 TL Olive oil
  • 1 Prise Salt
  • 1 Prise Black pepper, freshly ground
  • 1 Messerspitze Nutmeg, freshly grated
  • 28 Stück Salty crackers
  • 4 EL Parmesan, fresh, finely grated
  • 60 g Butter, melted
  • 2 EL Parsley, freshly chopped

Crush crackers

Thermomix® Setting
10 sec/Speed 8

Place 28 salty crackers in the mixing bowl and chop for 10 sec/speed 8. If necessary, push down with the spatula and repeat the process until the desired consistency is reached.

Prepare Parmesan cracker mixture

Thermomix® Setting
3 min/122°F/Speed 2 50

Place 60 g butter in the mixing bowl and melt for 3 min/50°C/speed 2. Then add 4 tbsp grated Parmesan and the crushed crackers and mix for 10 sec/speed 3. Transfer the mixture and set aside.

Preheat oven and prepare baking dish

Preheat the oven to 220 degrees top/bottom heat. Grease a large baking dish (approx. 30x20 cm) with butter and set aside.

Prepare cauliflower

Clean the cauliflower, remove the thick outer leaves and the hard part of the stalk. Then quarter the cauliflower and cut the stalk out of the cauliflower quarters. Divide the florets into bite-sized pieces.

Grate cheese and dice ham

Grate 200 g Gruyère or Emmental and 50 g Parmesan fresh and set aside. Dice 300 g of cooked ham and set aside as well.

Cook cauliflower and macaroni

8 min/212°F/Linkslauf Speed 1 100 Reverse

Put 3 liters of water and 2 tbsp of salt in the mixing bowl and bring to a boil for 12 min/100°C/speed 1. Then add the prepared cauliflower and 300 g of short macaroni and cook for 8 min/100°C/Reverse speed 1. Make sure that the pasta does not stick to the bottom.

Collect pasta water

Towards the end of the cooking time, drain 200 ml of pasta water and pour it into the prepared baking dish.

Drain cauliflower and macaroni and season

Drain the cauliflower and macaroni and add to the pasta water in the baking dish. Season with salt, pepper and freshly grated nutmeg and stir well.

Finish casserole

Stir the grated Gruyère or Emmental, the grated Parmesan, 200 g Creme Fraiche and the diced ham into the cauliflower macaroni mixture and season to taste.

Spread Parmesan cracker crust and bake

Spread the Parmesan cracker mixture evenly over the casserole. Place the casserole in the preheated oven on the second shelf from the bottom and bake for approx. 8-10 minutes until golden brown.

Garnish and serve

Garnish the finished casserole with 2 tbsp of freshly chopped parsley and serve.
