Description

This cauliflower gnocchi casserole is a vegetarian main course with roasted cauliflower, creamy cheese sauce and baked gnocchi. Preparation takes about 60 minutes and results in a hearty meal. Ideal for a hearty lunch or dinner. The casserole is rich in vegetables and cheese and offers a delicious combination of flavors and textures.

  • 1 Stück Head of cauliflower
  • 2 EL Olive oil
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • 50 g Butter
  • 50 g Flour
  • 500 ml Raw milk
  • 1 Stück small Garlic clove
  • 1 EL English mustard
  • freshly grated Nutmeg
  • 200 g finely grated Raw milk mountain cheese
  • 500 g Gnocchi
  • 80 g freshly grated Parmesan
  • chopped Parsley

Preparation (11 steps)

Preheat oven

Preheat the oven to 180°C top/bottom heat.

Prepare cauliflower

Divide a head of cauliflower into florets and set aside the beautiful green leaves. Mix everything together with 2 tablespoons of olive oil, salt and pepper in a bowl.

Roast cauliflower

Place the prepared cauliflower on a baking sheet and roast in the preheated oven until golden brown. The roasting time is approx. 20-25 minutes.

Melt butter

Put 50 g of butter in the mixing bowl and melt for 3 min./50°C/speed 1.

Prepare roux

Add 50 g flour to the melted butter in the mixing bowl and sauté for 3 min./100°C/speed 1.

Prepare cheese sauce

Gradually add 500 ml raw milk through the lid opening and cook for 8 min./90°C/speed 3, stirring constantly, to create a smooth, creamy sauce. Leave the measuring cup in place.

Refine sauce

Add 1 small grated garlic clove, 1 tbsp English mustard, some freshly grated nutmeg and 200 g finely grated raw milk mountain cheese to the mixing bowl and stir for 3 min./60°C/speed 2 until the cheese has melted. Season with salt and pepper.

Layer casserole

Place the roasted cauliflower florets with 500 g gnocchi in a casserole dish.

Distribute cheese sauce

Pour the cheese sauce over the cauliflower-gnocchi mixture and sprinkle everything with 80 g freshly grated Parmesan.

Bake casserole

Bake the casserole in the preheated oven until the surface is golden yellow and slightly crispy. The baking time is approx. 15-20 minutes.

Garnish and serve

Remove the finished casserole from the oven and sprinkle with some chopped parsley. Serve immediately.
