Ingredients (12 ingredients)

  • 700 g waxy potatoes
  • 1 Kopf Broccoli
  • 2 Stück Bell peppers - red and yellow
  • 300 g Carrots
  • 30 g Butter
  • 30 g Flour
  • 250 ml Milk
  • 250 ml Vegetable broth
  • 100 g grated cheese
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • 1 TL Paprika powder

Preparation (10 steps)

Prepare potatoes, broccoli, bell peppers and carrots

Preheat the oven to 200 degrees Celsius with top and bottom heat. Peel 700 g waxy potatoes and cut into small pieces. Divide 1 head of broccoli into florets. Cut 2 bell peppers (red and yellow) into small pieces. Cut 300 g carrots into slices.

Pre-cook potatoes, broccoli and carrots

Pour 1000 ml water into the mixing bowl and bring to a boil for 10 min./100°C/speed 1.

Put the potatoes in the simmering basket

Insert the simmering basket and add the chopped potatoes. Cook for 6 min./100°C/speed 1.

Add broccoli and carrots

After 2 minutes (i.e. after a total of 4 minutes cooking time for the potatoes), add the broccoli florets and carrot slices to the potatoes in the simmering basket and continue cooking for the remaining 4 min./100°C/speed 1.

Drain the vegetables

After the cooking time, remove the simmering basket with the vegetables and empty the water from the mixing bowl.

Prepare the roux

Put 30 g butter in the mixing bowl and melt for 2 min./50°C/speed 1.

Add flour

Add 30 g flour and sauté for 2 min./100°C/speed 2.

Prepare the sauce

Add 250 ml milk and 250 ml vegetable broth and stir in for 5 min./90°C/speed 3. Season the sauce with 1 tsp paprika powder, salt and pepper.

Layer the casserole

Put the pre-cooked vegetables and bell pepper pieces in a casserole dish and mix with the sauce from the mixing bowl.

Add cheese and bake

Sprinkle the vegetable casserole with 100 g grated cheese (e.g. Gouda) and bake in the preheated oven for 30 minutes.
