Description

This sweet potato casserole is a delightful and comforting dessert, perfect for holiday gatherings or any special occasion. The creamy sweet potato base, infused with cinnamon and vanilla, is topped with a crunchy pecan and coconut streusel. I've been making this casserole for years, and it's always a crowd-pleaser. It's incredibly easy to prepare, especially with the Thermomix®, and the combination of sweet and nutty flavors is simply irresistible. The aroma that fills the kitchen while it bakes is heavenly! This casserole is best served warm and is a wonderful way to end a festive meal.

Ingredients (11 ingredients)

  • 4 can mashed sweet potatoes
  • 1 cup white sugar
  • 0.5 cup butter, softened
  • 0.5 cup milk
  • 2 piece eggs, beaten
  • 1 tbsp ground cinnamon
  • 1 tsp vanilla extract
  • 1.5 cup brown sugar
  • 1 cup chopped pecans
  • 1 cup flaked coconut
  • 0.5 cup butter, softened

Preparation (4 steps)

Prepare the sweet potato mixture

Thermomix® Setting
30 sec/Speed 4

Add the mashed sweet potatoes, white sugar, softened butter, milk, eggs, ground cinnamon, and vanilla extract to the Thermomix bowl. Mix for 30 Sec./Stufe 4 until well combined.

Transfer to casserole dish

Pour the sweet potato mixture into a greased casserole dish.

Prepare the topping

Thermomix® Setting
20 sec/Speed 3

Add the brown sugar, chopped pecans, flaked coconut, and softened butter to the Thermomix bowl. Mix for 20 Sek./Stufe 3 until combined.

Add topping and bake

Sprinkle the topping evenly over the sweet potato mixture in the casserole dish. Bake in a preheated oven at 175°C (350°F) for about 30 minutes, or until the topping is golden brown.
