Description

This semolina quark bake with fresh fruit from the Thermomix® is a delicious dessert or a filling breakfast. The main ingredients are quark, semolina, eggs and seasonal fruit. With a preparation time of 45 minutes, 20 minutes of which are active, the recipe yields 6 servings. Ideal for light cuisine in summer and spring or as a family meal. The recipe is vegetarian.

Ingredients (9 ingredients)

  • 4 Stück Eggs size L
  • 200 g Fresh fruit as desired and in season
  • 500 g Creamy quark (40%)
  • 70 g Sugar
  • 75 g Soft wheat semolina
  • 2 Päckchen Bourbon vanilla sugar
  • 1 Spritzer Lemon juice
  • 1 Prise Salt
  • Butter for the dish

Preparation (8 steps)

Preheat oven and prepare baking dish

Preheat the oven to 180°C top/bottom heat (160°C convection oven). Grease a baking dish with a diameter of approx. 26 cm or approx. 32 x 25 cm with butter.

Separate eggs and beat egg whites until stiff

Separate 4 eggs size L. Place the egg white with 1 pinch of salt in the mixing bowl and whisk with the butterfly 3 min./speed 3.5 until stiff. Transfer the egg whites and place in the refrigerator.

Beat egg yolks until foamy

Place the 4 egg yolks, 70 g sugar and 2 packets of Bourbon vanilla sugar in the mixing bowl and beat until foamy 2 min./speed 3.

Prepare quark mixture

Thermomix® Setting
30 sec/Speed 3

Add 500 g creamy quark (40%), 75 g soft wheat semolina and 1 splash of lemon juice to the egg yolk-sugar mixture in the mixing bowl and stir 30 sec./speed 3.

Fold in fruit

Carefully fold 200 g fresh fruit (or frozen fruit, fruit from a jar or can, well drained) into the quark mixture in the mixing bowl using a spatula. If using frozen fruit, use it unthawed.

Fold in egg whites

Carefully fold the egg whites briefly into the quark mixture in the mixing bowl using a spatula. Do not stir too much so that the egg whites remain stable.

Bake casserole

Spread the quark mixture evenly in the baking dish, garnish with pieces of fruit as desired and optionally sprinkle a handful of flaked almonds over it. Bake the casserole for approx. 30-35 minutes on the second rack from the bottom. Cover if necessary if it gets too dark.

Let the casserole cool and serve

Let the casserole rest and cool for about 5 minutes before serving. Serve with a fruit, vanilla or chocolate sauce as desired.
