Description

This dauphinois bake is a comforting and flavorful dish, perfect for autumn or winter evenings. I love preparing this bake because it is incredibly creamy and melts in your mouth. The potatoes, cooked in milk flavored with garlic and nutmeg, become tender and absorb all the flavors. Fresh cream brings an incomparable smoothness, and the grated cheese browned on top adds a gourmet touch. It is an ideal dish to accompany roast meat or a green salad. A real treat for the whole family!

Ingredients (8 ingredients)

  • to taste Nutmeg
  • to taste Fine salt
  • to taste Pepper
  • 10 cl Liquid fresh cream
  • 50 cl Milk
  • 2 clove Garlic
  • Grated cheese
  • 1 kg Potato

Preparation (7 steps)

Preparation of the potatoes

Peel 1 kg of potatoes and cut them into thin slices of 2/3 mm. It is important not to wash them after peeling them to preserve the starch, which will contribute to the smoothness of the bake.

Garlic preparation

Peel 2 cloves of garlic, cut them in half to remove the germ, then put them in the Thermomix bowl and finely chop for 3 Sek./Stufe 7.

Cooking the potatoes in milk

Thermomix® Setting
15 min/194°F/Speed 1 90 Reverse

Pour 50 cl of milk into the Thermomix bowl. Add the sliced potatoes, chopped garlic, a pinch of grated nutmeg, salt and pepper. Cook for 15 Min./90°C/Stufe 1 while mixing in reverse to prevent it from sticking to the bottom.

Draining the potatoes

Drain the cooked potatoes and reserve the cooking milk.

Preparation of the cream sauce

Thermomix® Setting
3 min/194°F/Speed 2 90

Put the cooking milk back into the Thermomix bowl. Add 10 cl of liquid fresh cream and cook for 3 Min./90°C/Stufe 2 until boiling.

Assembling the bake

Butter a gratin dish. Place half of the drained potatoes in the dish, pour half of the cream sauce, then add the rest of the potatoes and the rest of the sauce. Sprinkle with grated cheese.

Baking in the oven

Bake the bake at 180°C for 35 minutes.
