Description

This recipe for gratinated chicken breast with mushroom cream is a true delight! I like to make it when I want to cook something special for the family. The combination of tender chicken breast, creamy mushroom sauce and the gratinated cheese is simply unbeatable. Elbow macaroni goes perfectly with it. The dish is a bit more complex, but the effort is definitely worth it. Ideal for a festive dinner or just to treat yourself again. Preparation in the Thermomix® makes the work much easier!

Ingredients (14 ingredients)

  • 2 piece small Onions
  • 2 clove Garlic
  • 500 g brown Mushrooms
  • 4 Zweig Rosemary
  • 5 tbsp Sunflower oil
  • 4 piece Chicken breast fillets
  • Salt
  • Pepper
  • 20 g Butter
  • 30 g Wheat flour Type 405
  • 300 ml Cream
  • 100 ml Milk
  • 0.5 piece Lemon
  • 500 g Elbow Macaroni

Preparation (11 steps)

Prepare onions and garlic

Thermomix® Setting
3 sec/Speed 5, 3 sec/Speed 7

Peel 2 small onions, quarter and place in the mixing bowl. Chop for 3 seconds/speed 5. Peel 2 cloves of garlic, add and chop for 3 seconds/speed 7. Use the spatula to push everything down from the edge.

Prepare mushrooms

Wash, dry, clean and chop 500 g brown mushrooms. Chop 2 sprigs of rosemary.

Sear chicken

Heat 2 tbsp sunflower oil in a large pan and sear the 4 chicken breast fillets in it from both sides, season with salt and pepper. Remove and set aside. Preheat the oven to 160 °C top/bottom heat.

Sauté mushrooms

Heat the remaining oil (3 tbsp) in the pan and sauté the sliced mushrooms in it.

Prepare béchamel

Thermomix® Setting
2 min/122°F/Speed 1 50

Put 20 g butter in the mixing bowl and melt for 2 min./50°C/speed 1.

Make roux

Thermomix® Setting
3 min/212°F/Speed 2 100

Add 30 g wheat flour type 405 and sauté for 3 min./100°C/speed 2.

Prepare sauce

Thermomix® Setting
5 min/194°F/Speed 3 90

Add 300 ml cream and 100 ml milk and stir in for 5 min./90°C/speed 3. Squeeze 0.5 lemon, add juice, chopped rosemary and garlic. Season with salt and pepper.

Prepare casserole

Place chicken fillets and onions in a baking dish. Mix mushrooms with the béchamel sauce and add to the chicken in the dish.

Gratinate

Place the dish in the preheated oven and bake for 30 minutes.

Cook noodles

Cook 500 g elbow macaroni according to package instructions.

Serve

Drain the noodles and serve with the meat. Garnish chicken breast fillets with the remaining 2 sprigs of rosemary.
